- Welcome to the second episode of the coffee series. Now today we going to shade some light on Coffee processing.
Coffee processing basically entails extracting the seed from inside the berries.
The three common types of processing are;
a. Washed processing
During this process, the coffee pulp is removed, leaving a sticky layer called mucilage on the bean.
The beans are then washed and held in a concrete fermentation tank for 18-38 hours to develop flavour, acidity and body.
b. Semi washed
Coffee pulp is removed using small hand-pulping machines, and then coffee is washed and laid out to the sun to dry.
Parchment is removed and the coffee is laid out for final drying followed by sorting and grading.
c. Natural process
Coffee cherries are allowed to dry completely on the bean, letting the bean develop flavours before the skin and the parchment are removed, followed by sorting and grading. After pulping, the cherries are dried on the drying table by removing moisture content from 49%- 12%. Drying is done by direct sunlight or artificially. One key note is that drying should be done on the same day to avoid undesired traits.
