    It’s incredibly rare too see a UA-cam video where the traditional and correct chipping of the vegetables is done rather than cubing.
    Nicely done.

    Mum now approaching the grand old age of 94, still makes an ansom pasty and continues to raise thousands of pounds for charity. A very special lady and we are all very proud of her.

      Unfortunately you have not shown her mixing the flour in order for us to see the size of the pieces after the flour has been incorporated into the butter and or lard with ice water - a very important point in making pastry

    I've been looking for a good, genuine Cornish pasty recipe, so when I see a 94 year old lady who sounds like she's from Cornwall, been making pasties all her life, and showing how to make Cornish pasties, you're damn right I'm going to watch and learn 👍

    Too many videos labelled ‘how to make a proper pasty’ but filmed by americans and tv personalities thatre obviously having their first or second attempt. Glad to have found your channel with someone with actual experience.
    Im surprised that you don’t cook the ingredients first, but changing the cooking environment makes far more sense.
    Thank you.

      She's proper alright an no, never cook the ingredients first 😮.
      I thoroughly enjoyed watching Edna but I wish her recipe was written down here somewhere as I can't quite grasp what she's sayin.
      An i daren't phone me mother an ask as I'd likely incur a clip round the ear! 😅 . Very proud Cornish mum. Who's shown me more an once how it's done! Falmouth.😉

    Now that is the real thing! The size of it!!! Thanks for sharing your skills. At 92 you are a marvelous Cornish lady who is keeping traditional real food alive. Shop bought pies and pasties chucked out by machine and containing God knows what can't touch this. Thank you!

    Dear lady. Edna is just an absolute treasure. After watching her make a pastie, you don’t need to look any further. Her method is “the bomb” of all methods. Edna reminds me of my lovely English grandmother whose little kitchen produced better tasting and more nourishing food than I’ve ever had anywhere.

    • @jamienwood

      Simon, you are not wrong! Most people get surprised at the size of a proper pasty - it is and always has been a meal in its own right! Can’t beat them!

    The Lockdown has made me want to cook things from scratch more, and can you believe that I was born and have lived in Cornwall all my life and never had a go at making a Pasty! I just found your video and I don't need to search for any more, this is proper!! Thank you Edna, and I wish you and your family well during these times. I'm so glad I live in Cornwall, we are so lucky! Can't wait to have a go, you make the crimping look so easy! Best wishes from Goonhavern. Steve & family.

    Edna reminds me of my Great Aunt Flo. She and my grandfather were born in Cornwall and emigrated to the U.S. around 1920. We grew up on Pasties and Sausage Rolls. Love listening to her talk and chuckle! Takes me back to my youth! Thanks for sharing dear Edna!

    And that, ladies and gentlemen, is how you make a pasty. No need to look anywhere else. She reminds me so much of my Cornish grandmother.. V important to chip the potatoes, no cubes.

    • @Knappa22
      @Knappa22 5 років тому +1

      Yes! My granny did nearly all her veg like this. Same with bread. She’d butter the loaf then cut a slice horizontally, cutting towards her. She never put a loaf on a board to do it.

    • @moniquem783
      @moniquem783 3 роки тому

      I do that (not a granny but my gran does it and I must’ve learnt from her) for salad veg and hard boiled eggs etc. Never done it with bread though. That’s impressive!

      They are super, as a Northerner when I had my first proper Cornish Pasty from Edna I was shocked by the size too, but the origin of them was as a meal for the workers (miners, fishermen and farmers), so makes sense really to keep them going, proper ones are definitely a meal on their own!

      Hi Rab, Edna loves seeing comments like these, this will definitely make her day! We are just trying to tempt her into making another video…but she finds it a little crazy quite so many people from far and wide have watched this one!
      Edna is still well, still living on her own, in her own home at the young and tender age of 101 🥳 still raising money for a local charity 🤯 she is a proper inspiration.
      Happy holidays to you and your family, I hope you are all having a good one!

    • @jamienwood
      @jamienwood  5 років тому +1

      Hi andy d, in short no, in fact it's so important if you have any holes in the pastry it needs a small patch of pastry sticking over it (damp around the hole before gently pressing a small patch of pastry over the top).
      It's the stream that cooks the ingredients and also makes the gravy inside. Any holes will lead to a dry pasty! Hope that helps 😊

      @@Randyvanbag hi let me see what I can remember... Short crust pastry made with lard and butter chilli well she would blend thefatinto the flour well but Not into fine crum mix with a knife blade and Very cold water.
      When buying skirt beef have a little fat left not loads as this will help with the gravy in th pasty. Chop onion. When it comes to the potato and sweed donltchopin cubes but cut smalltbin slises off the spud and sweed. Roll out pastry not too thinly cut into a disc small dinner plate what ever size suits. Layer the vetandmeet along the centreseason well and add a knob of butter moisten the edges and crimp together. If the pastry tears take a bit of paztrydab it in some water and pop it over the hole. My pastys tastes OK but never look pretty. Wipe over an egg wash and place in the oven on a gas mark 5 or 6for about 15 minutes tun down to a 3 or 4 for a other 30 minutes ish I check by putting a sharp knife into one and if the spud resist leave in for a little longer. If the pastry is begin g to look too row loosely covering foil. Hope this helps
