Cathy, I would think you could but processing time should be the same as pints. I use 8oz jars a lot since there are only me and my husband. In fact my ketchup is in 8oz jars.

Jeni thank you for the Canuary lesson in making what appears to be a very tasty Taco sauce made by pressure canning. I love hot sauces and would love to know how to get the chili peppers you used, they aren't familiar to me. I bet the Forjars collaboration has been a good lesson for those of us not having the All American Canner to can in. It has been fun to be part of Canuary.

I made this using your printed recipe which is a little different than the video. I omitted the arbol and jalapeno but it's still pretty hot. Hubby will love it. Thank you for sharing.
