when I had my own kebab shop in Scarborough England.I used a large long blade to cut thin slices.An old guy who used to do Tuna kept his blade as well as a load of old things from his home land.he had no one to pass the blade onto.so he gave it to me.as he saw the respect I gave my blade.kept it clean and sharp. He also gave me a small blade as well.about 15 innches long.I offered him money.but he was to proud.so he had free kebab off me for over 4 and a half years.till ine night he never came back in.I still have the small blade as someone broke into my shop about 36 years ago and stole the big one. the best blades I ever owned.👍👍👍👍👍

I don't know if it's just me, but I see this as a representation somehow of us people, that we have to experience such processes; the burning flames, countless smashing, and all the pressure to be one of a kind "knife" that can eventually be "ready" to slice whatever is in front of it in the perfect time.
That we have to deal with such pressure first for us to be strong and sharp enough to face whatever life throws at us in the future.
I don't know, maybe I'm kinda emotional rn, but for anyone who needs to hear this, hang on, the pressures are high, and it is intended for us to be stronger, we can do this! ❤️

I watched the full-length video of them prepping the tuna into sashimi and was stunned at that massive fan-shaped knife...one second the guy's using it to chop a massive tuna's head off in a couple of shots, the next he's *pushing* it through every bone in its body, the next he's removing one layer of scales with complete precision, WITH THE SAME KNIFE. That is one amazing piece of steelwork in the hands of a skilled worker.
Taiwanese fish cleaver. Half moon cleaver. All sorts of names. Serbian cleaners are very similar. Matter of functionality. As you saw :)
The truly amazing thing is blacksmiths on separate continents and sometimes centuries apart came up with so many similar designs.

Hand forging has always amazed me. I used to supply steel to companies manufacturing garden tools and seeing a garden fork made was fascinating. Noticed no ear protection used. Anyone who has been in a forging shop will know how noisy it is.

Looks like he's using leaf springs possibly which is usually 5160 spring steel. It's a tough steel used for longer blades like swords and will hold a great edge. This gentleman has skills.

@@jassjokbal6869 it’s just the type of steel commonly used in leaf springs. It has .60% carbon. Kind of like 1084, 1095 steel, etc. they’re all good high carbon steel for blades.

That differential quench where only the front 20% was up to temp was very evenly done. There’s something you can’t easily do in a propane forge. Very impressive

I can achieve that level of sharpness at home. Any blade can be made that sharp. The difference between a quality blade and crappy blade is how long they hold that sharpness.

Did anyone else notice @ the 24th minute, how badly the cutter's long knife was ground ? But maybe it was the lighting causing the irregular looking deformity in the blade ? I hope so.
No that edge was pretty bad. Probably from bad hand sharpening

我三年前去參觀日本燕三条的文化祭, 參觀他們的各種工廠, 包括最有有名的打鐵廠(包括六家小工廠)刀子是不是比台灣鋒利我不知道, 但工廠的乾淨度至少是我影片看得百倍以上, 不管是擺設, 清潔就像天與地的差別,台灣產業要升級真的不可能了
光價格就天差地遠,
在日本,買一把手工打造的「真劍」、刀具,
你去詢問看看要多少錢,
打造出來的刀具品質,
不是光看製造環境,就能給予評價、評論,
而是要各方面的比較,
性價比高,更能吸引一般人選購。
真要我選擇,
我更喜歡楊師傅這種打造出來的「物美價廉」刀具。
我反而覺得台灣的邏輯教育比較失敗
