    warning should come with this recipe. if you plan on making the caramel filling by boiling, PLEASE ALWAYS KEEP THE ENTIRE CONTAINER OF MILK UNDERWATER. If you fail to do this, the pressurized container can and will EXPLODE. If you don't wait at least an hour before opening it, it will explode. If you've ever melted sugar before, you will understand that even touching a little with your finger tips will blister the skin that made contact. Imagine that with molten syrup milk. An entire. Container. Of. It. So please, PLEASE if you can, make the caramel in a skillet. Add about 1/4 cup of the milk, stir on medium heat until caramel-like, then add a tablespoon of milk at a time, making sure to stir it all in before adding more. This produces the exact same results, and doesn't have such a high risk. I love this recipe, I absolutely adore it, but the first time I decided to try it, I almost made the mistake I'm cautioning you against. This PSA ends here. Have fun.

      Or just buy the caramel la lechera brand has the caramel ready to use. Instead of boiling the can.

    Hi, Byron! Awesome recipe! I'm from Brazil and in my country it's very common to boil the condensed milk to make what we call "Doce de Leite", and we use just a regular pressure cooker and boil the can in water for about 30 minutes counting from the moment the pressure hits the pan. If you ever try the pressure cooker remember to remove the label from the can before you do it; also, you can use about a tbsp. of regular vinegar in the boiling water to avoid staining your pan's metal (that is a valid tip for any kind of metal boiling, actually, even if your boiling eggs!). :) Great job with the macarons!

    Maybe im supremely inexperienced and unaware of better recipes but this simple one got my macarons feet! And no cracks! I still think i need to do some tweaking but I'm pretty happy with the result so far. Thanks for sharing this recipe!

    Just tried this recipe. It is amazing and pretty! Make sure the macarons are dry and dull (lost their shininess) before you pop into the oven. My first try cracked on top, but the next 3 batches were great! Thank you for sharing!

    I totally ate a macaron from a super fancy cafe in vancouver last week and it had a giant air bubble taking up the whole top part of the macaron, I thought right away what the heck they didn't tap out all the air bubbles like Byron does!! LOL

    I followed the recipe for the Macarons but for the caramel filling I made the caramel myself. (from sugar, water butter and cream) It is just heavenly how it tastes

    Toasting the almond meal is a great idea, thanks for that. I am also impressed that you made these without any kind of machinery. I use a hand mixer and it usually takes 10 minutes of beating!

    Hey I'm thinking of putting a layer of chocolate and a thinner layer of caramel to make it look like a cheeseburger for a childs party. What do you think about the two flavors chocolate & caramel? It works in candy bars no?

      did this for a my godson's birthday! I added a green colored buttercream for the lettuce... tasted great!. Just be wary, this will cause a massive sugar rush... :D

    Wasn't that dulce de leche not caramel? Caramel is just melted sugar that has been cooked to 170 degrees F.

    Thanks for the recipe Byron! I just made these today and made the filling last night. Mine turned out more runny and messy (filling wise). I boiled the condensed milk can for 2.5 hours and kept adding more water as it evaporated. They were delicious though!

    One thing I've always realized on the comment section is that, people do like to insult other people with different opinions or because they think they are smarter. If you know something someone doesn't know, I'm not saying it's wrong to teach them, but to go ahead and insult, it's kind of immature and at the end everyone justs argues over comments that don't need to be argued about in the first place. Just saying it's not worth it.

    That's not caramel, that's dulce de leche, caramel has butter in it.

      I've never tried your caramel, but I think it's pretty close, just without butter or cream.

      ***** Yeah well, the quick way to make dulce, the complete recipe is better, but yeah, not american caramel at all, I've taste american caramel and I don't like it because of the butter is kind of greasy, nothing compares to dulce de leche, is amazing.

      Yeah it taste a lot like like caramel, but very sweet and thick. It's spanish, I know a Peruvian woman who makes it, and I LOVE to eat it with a spoon. (Guilty pleasure)

    I was worried because I used a different recipe with more sugar last time, but this recipe was good! The caramel takes a long time to make but very worth it. Make sure to whip the egg whites long enough, I was worried that I overmixed them so I redid them.

    agree very much with your point that your macaron-making skills improve every time you do a batch! got my first good batch after five tries and quite a bit of frustration (just bc the batter is so finicky in humid weather) but it's a very rewarding process :) superb video! really in love with the camera work and the macarons are perfect.

      *****​ You can make incredible caramel cream with a similar method to the chewy caramel candy method, and I simply think you get a more rich flavor, and smoother texture when you do it the old fashioned way. Caramel made with sweetened condensed milk is ok when mixed with other things, but alone it doesn't taste as good to me.

    my batter turned out to be a cookie batter like consistency. I still ended up baking them, and they turned out way to thick and had many air bubbles, but still had the foots. I am gonna try again today :) This is the best macaron video out on youtube, and I've probably watched this over 50 times

    If you want a faster time for the caramel or dulce de leche, you could always try doing it in a pressure cooker for about 20-30 minutes. My mom does that trick for me

    In Brazil we call cooked condensed milk - doce de leite. A really easy way to cook it is on a pressure cooker. Remember to remove the paper of the can. If you cook it less you get a brown thick cream, if you cook more you'd get a really consistent sweet, that you could cut it with a knife.

    My macaron batter came out dry no matter how long I fold it, its never be runnier so I ended up putting 1 small raw egg white and I will update for the result

    You should not show yourself taking the *hot* can of sweetened condensed milk out of the *boiling hot* water with your *bare* hands... I'm sure you just needed to stage it for the video, but it needs to be staged correctly, or someone might actually think it's appropriate to use their hands when making the caramel.
    Otherwise, great recipe! ...I love the idea of toasting the almond for this particular macaron.

      I'm pretty sure he would have let it cool down before he took it out of the water. Since it's common sense to A) not touch hot things with your bare hands and B) don't put hot food in your refrigerator.

    Hi thats a lovely and simple recipe will surely try it out soon. By the way the dulce de leche can be made in a shorter amount by placing the can of condensed milk in a pressure cooker with enough water and its done in 15-20 mins max.

      It's called dulce de leche, and I use a slow cooker to make mine. Fill it with water, plop the can in, and cook on low for eight hours.

    I just made these and they gorgeous! I used the top and fill caramel I buy from the shops here in Australia, it was so much easier! This recipe is a great and easy recipe :) if you are using liquid dye, don't add to much, I made an lite orangy yellow and they turned out the same colour, I think it was about 1 drop red and 3 small drops yellow :)

    OH MY GOD. Its ma-ca-RON. one O. Everytime he pronounces it like macarOOn which is totally different. This irks me so much when people get macaron and macaroon mixed up, speaking and spelling wise.

      I think he bites his nails too cause well you can kind of tell. (: Mine used to be like that. There's still nail polish you can buy at Walmart that helps you stop biting your nails and i no longer bite my nails anymore! it's only 3$ too (:

    its a dulce de leche macaron, not caramel -_- also you overfilled them way too much. 1 teaspoon per macaron not 2.

    Brilliant! In the past when I have made Dulce de Lèche, I use my pressure cooker, that really speeds up the process. But not everyone has or wants to use a pressure cooker. If you do, make sure you use your brain so that it doesnt explode on you. I think it calls for piercing a hole in it. But its been a few years. Thanks again for sharing. You are very skilled, and I like your approach of doing it all without the mixer.

    Almond flour is expensive and after folding this dang mixture for a few minutes i developed rheumatoid arthritis! And was left with 8 macaron shells! Lawd Jesus something done went wrong!!! Felicia ain't got time for this💃🏼💃🏼💃🏼💃🏼
