INGREDIENTS 🇮🇹:
Water 1 glass - 200 ml.
A pinch of salt.
Butter 100 gr.
Flour 1 glass - 140 g.
Prepare the dough.
Cool the dough.
2 eggs.
Sugar 120 gr.
Corn starch 60 g.
Milk 500ml.
Boil the cream.
Cool the cream.
4 eggs, add one at a time.
Baking tray 18 cm, add half of the dough.
Bake for 20-25 minutes at 200 C.
Repeat with the second cake.
Butter 160 gr.
Vanilla sugar 5 g.

To help those having trouble with the instructions or conversion from grams & milliliters to cups, etc., I’ve broken things down for you. I’ve also added some variations and tips, including how to make vanilla sugar. Happy baking!
200 ml (1 cup, less 2 TBS) water
Pinch (approx 1/8 tsp) of table salt
100 gr (approx 1/4cup [half a stick]) unsalted butter
Stir together in medium saucepan over medium heat until butter melts.
Add 100 gr (1/2 cup + 2 TBS) A/P flour & keep stirring until mixture is smooth and starts to pull away from the sides of the pan.
Remove from heat & spoon into a medium-large glass bowl; cover with plastic wrap, making sure to press it against the dough to keep it from drying out, and let cool.
In medium-large saucepan whisk:
2 eggs
120 gr (1/2 cup, less 1 1/4 tsp) granulated sugar
Then whisk 60 gr (1/2 cup) cornstarch & a couple TBS of cold milk (from your 500 ml allowance [approx 2 1/4 cups, less 2 TBS]; see below) together to make a slurry. Add slurry to egg & sugar mixture and continue whisking until fully incorporated.
Whisk in remainder of the 500 ml milk and bring to boil over medium heat, stirring until thickened.
Remove from heat & spoon into glass bowl; cover with plastic wrap, again, making sure plastic presses against the filling so no skin forms; chill in fridge.
To cooled dough, add 4 eggs, one at a time, and incorporating with wooden spoon or spatula after each addition.
In a prepared 18cm (8”) springform pan (lightly buttered, with parchment circle lining bottom of pan), spoon in half of the dough and smooth top with offset spatula. Bake 20-25 min at 200 C (392 F) until top is golden brown (Or bake at 189 C [365 F] for 30 minutes). Do NOT open oven door during baking.
Remove from oven; run a knife around the edge, release the spring, and remove cake; put to the side to cool.
Spoon second half of dough into the pan (prepared again) and smooth top. Bake 20-25 min at 200 C (392 F) until top is golden brown. (Or bake at 189 C [365 F] for 30 minutes. Do NOT open oven door during baking).
While 2nd layer is baking:
Remove cooled cream from fridge & stir to smooth. In larger bowl, using hand mixer on medium, beat 160 gr (approximately 2/3 cups) softened, unsalted butter until light and & fluffy, then add cream mixture in several additions, incorporating after each addition. Stir in 5 gr (1 1/4 tsp) vanilla sugar.
Place ring form (adjustable cake mold) around 1st layer, lined with a circular acetate collar (or parchment paper sprayed with cooking spray). Spoon in cream mixture and level with offset spatula. Top with 2nd layer. Refrigerate for 4 hours.
Remove from fridge; unmold and carefully remove acetate (or parchment paper).
Top with sifted confectioner’s sugar, slice & serve. To store, press plastic wrap against cut edges. Refrigerate leftovers.
NOTES & VARIATIONS
* WEIGH YOUR INGREDIENTS! While I’ve included cups conversions, if you’re going to bake - especially with bread and pastry making - GET A KITCHEN SCALE. It’s more accurate & helps provide perfect results every time. If you must get conversions, the Internet has dozens of spots for info. Please remember that different ingredients have different weights, so when seeking conversions always note the ingredient in your search (i.e., “200 gr flour to cups”)
* Want a sort of Boston Cream Pie effect? Top with a chocolate glaze or ganache (like you’d use for an eclair).
* Top with fresh berries or cherries & a dollop of whipped cream.
* No adjustable cake mold? Use the top section of a larger springform pan.
* Sprinkle with sliced, toasted almonds for a nice, nutty flair.
* Want a little zing to the cream? Stir in the zest of an orange or lemon.
* Can also be made into smaller, individual cakes. Just adjust baking time to accommodate size(s) you choose.
* For a less fussy application, bake on one large, rimmed baking sheet (keep your eye out for faster doneness), cool, and top with cream, and cut into squares to serve. Top with berries and/or almonds, or drizzle with ganache if desired).
* Add a TBS of cognac or Amaretto to the cream to bring it all over the top!
TO MAKE VANILLA SUGAR:
Easy to do: Put 2 cups granulated sugar into a food processor. Split 1-2 vanilla beans down the centre and scrape seeds into the sugar. Pulse until seeds are incorporated and not clumped together. The sugar will also become a bit more fine - but don’t pulse too much or you’ll turn it into confectioner’s (powdered) sugar. Put into a 2-cup container, then cut the pod(s) into several large pieces and nestle them throughout the sugar. Let sit for at least 2 weeks for best flavor.

@@jonyoung6405 In my opinion it will be too sweet, and chocolate used to dominate the taste of the cake, it would be pity here, that's why berry fruits are good, giving it's freshness to already sweet cream.
Fruit does seem like it was elevate that cake!

I’ve made a variation of this recipe. There were days I had little money and wanted something sweet to eat. Eggs, flour, milk, butter, basics were usually on hand. I make this type of dessert and put jam with it, and a pot of tea. Life is good.
Me too. But we put chocolate glaze on it. Just like an eclair or Boston Cream Pie ala elegance

What type of cake is this? Is it sweet as is? Is it like a custard cake?
This looks divine. The "dough " is pate a choux or choux pastry. The same as for cream puffs and eclairs. A few minor changes, I would make half the custard amount adding in some vanilla bean. And then fold in whipped cream to make it lighter. Just my preference. I use this filling for cream puffs and eclairs.
I would also add some lemon zest to give more flavour.

Хотела завтра печь эклеоы, а тут увидела один огромный эклер. Обязательно испеку, только попробую ещё разрезать коржи и начинить. Сама бы не додумалась. Благодарю! Однозначно вкусно и быстрее, чем кучу маленьких эклеров начинять. А вкус- то тот же.
Тоже попробую...так как лучше сделать четыре коржа..и начинку распределить на три части...надо попробовать..

Я вам больше скажу. Лучше сделать один корж на большом противне и потом внутрь поместить крем. Моя жена так сделала один раз, это было очень круто. А если 2 коржа испечь то крем может не в питаться с поверхности коржа.

Amazing and so simple.. where I'm frm in the United States 🇺🇲we call something like that an egg🥚 custard cremé cake!! 🍰 or something similar...we tend to use heavy cream and condensed milk for the filling in the Southern part of the U.S.! I can't wait to try!!💖thank you for sharing!!

Когда делаете крем, измените последовательность. Взбиваем масло и постепенно вводим остывший заварной крем. Казалось бы какая разница, разница большая.
Да, и масло надо взбить добела, чтобы оно потеряло свой запах.
Да...и основу для теста можно сильно и не охлаждать...яица можно вводить и теплую основу..главное чтобы яица не сварились, градусов 50-60

That's exactly what it is. But for the cream filling, the cornstarch should have been mixed in the milk to avoid those little lumps.

“Cream Puff Cake”
Pastry:
1 C. Water. 1 C. Flour
1 stick butter. 4 Eggs
Combine water & butter in pan, bring to a boil. Remove from heat, add 1 C flour all at once and mix by hand till it forms a ball. Put mixture in mixing bowl, add eggs (slightly beaten) and mix till smooth. Put in
9 X 13 greased cake pan and bake at 450 degrees for 15 minutes, turn heat down to 350 degrees for 20 minutes. Check on it after 10 minutes and if it’s already browned cover with foil and continue baking for the last 10 minutes. Remove from oven and cool. (It will deflate as it cools)
Filling:
8oz cream cheese (softened)
3 1/2 cups of milk
2- 4oz pkgs INSTANT Pudding*
8 oz tub of Cool whip (thawed)
(* any flavor pudding)
Mix 8 oz softened cream cheese with 3 1/2 C. Milk until smooth…add 2pkgs pudding and mix till it thickens. Pour into cooled pastry shell. Top it with tub of cool whip. If u use coconut, banana, vanilla, or pistachio pudding, sprinkle browned coconut on top. 😋
Chill in fridge for one hour,

I make one that has coconut pudding, then I make homemade whipped cream and add toasted coconut on top. Tastes just like coconut cream pie. 🙂

It tastes okay. My mother in law used to make this as individual servings, piping the dough onto parchment, baking, cooling and then piping the cream into the puffed 'biscuits' like cream puff. The whole cake is really a waste unless it will all be consumed in a day, 2 at absolute most, after that it's really just a soggy mess.
These aren't what we think of as modern desserts. It's quite filling, very eggy and makes a lovely addition to brunch. Really good with fruit.
The dough, minus the cream filling, is multi purpose and can be either savory or sweet depending on what's added. I personally prefer them turned into crab puffs.
If you omit the egg whites and only use yolks it's less eggy and bakes more uniformly 👍

That looks so delicious! I’m definitely going to try it. And, I never thought of using a handled pot for a mixing bowl (I’m pretty literally minded), but I really appreciate that tip. Happy Holidays!
The handled pot is cause it is being heated the water to melt the butter and instead dumbing into bowl just mix it first
I always use pots as bowls because you get to control your pan/bowl and pans have flat bottoms so unlike bowls.If you do use a bowl try putting it on a damp towel, bowl won't slide so much.

Definitely one of my first non Keto desserts I'll make.
I'm happy with this diet. One more month dedication to it before I use sugar and flour again. I'm confident that in great moderation, introducing sugar and flour back into my diet, I can maintain my weight loss and even continue to loss.more fat.

I have to say also that the Keto bread recipe I use and modify is delicious, filling and versatile. But a good sour dough baguette is in my future lol
@@simoneconsciousobserver3105 I mean, that's great if you can do it. I consider starches and sugars to be allergens. I steer clear of them as much as possible. I'll indulge out of the house at times, but not at home.
