I made my 1st Sourdough bread using this video!!!!! Thank you! I used all Whole Wheat flour. The crumb is nice! Crust is chewy. Taste is good. My starter is new … need to develop it more.
You get better results when you follow the recipe for flour types and amounts because whole grain or bread flour or spelt or all purpose etc absorb water differently.

Cover with a damp towel and let rest for 30 minutes. After that just do one coil and fold then cover it with the damp towel and let rise overnight at room temperature. This will take about 8 to 10 hours. At the morning shape it and bake it.

I kinda prefer sourdough cause I live in a hot place and yeast basically would easily overferment even if I half the yeast amount stated in the recipe lol, but sometimes I wish I should've used yeast for the speed

A tip, your oven is a little too warm, which causes no real ear to form on the bread. The outside becomes firm before it has a change to 'grow'. Consider turning your oven down a few degrees! Good video btw ;)
I bake mine completely in the Dutch oven. I prefer the golden color to that really hard, dark burnt brown color. I also dust with cornmeal and not flour befire scoring.

Once we get around the idea of using something that's started decaying (which is actually fermenting in initial stage), we can make these recipes pretty well I guess..
If you get the correct sized pot for the amount of bread you plan on making, you don't need to rebake it without the lid. If you just plan on buying a cast iron pot, I recommend getting one which lid you can use as a pan. Now don't place the dough in the pot but the lid/pan and but the pot on top. Way easier to get in and out and less chance of burning yourself. Also good oven gloves are a game changer. I use ones for bbqing.

If you are in America, probably yes. American AP flour tends to have a higher protein content than other countries. If you are outside of America, still yes, but it will be more like a white bread than sourdough, as there won’t be enough protein to make the super open crumb structure. Still good bread though!
