❤ You make it all look so simple..
From this video and sourdough starter making video from Japanese channel @peacefulcuisine ,
I think this starter is noting but Indian roti dough that we throw away after it's forgotten outside overnight or in the fridge for a few days and gets stretchy n blackish n smelly..
The ingredients are same, wheat flour n water, after that the fermenting is intentional in bread-starter making as against we finishing it off on the same day..
Once we get around the idea of using something that's started decaying (which is actually fermenting in initial stage), we can make these recipes pretty well I guess..

If you get the correct sized pot for the amount of bread you plan on making, you don't need to rebake it without the lid. If you just plan on buying a cast iron pot, I recommend getting one which lid you can use as a pan. Now don't place the dough in the pot but the lid/pan and but the pot on top. Way easier to get in and out and less chance of burning yourself. Also good oven gloves are a game changer. I use ones for bbqing.

If you are outside of America, still yes, but it will be more like a white bread than sourdough, as there won’t be enough protein to make the super open crumb structure. Still good bread though!
