- Cottage cheese chocolate chip muffins
1 cup cottage cheese (250 grams )
11/4 cup rolled oats (125 grams)
2 large eggs
2 tablespoons maple syrup
2 teaspoons pure vanilla extract (or 1 teaspoon maple extract)
2 teaspoons baking powder
1 teaspoons cinnamon
1/4 teaspoon salt
3 tablespoons mini chocolate chips+ 1 more for the top
1. Preheat the oven to 350 degreesFahrenheit. Line a muffin tin with silicone muffin cup liners. You can also grease a nonstick muffin tin. I DO NoT Recommend paper cups here .
2. Blend the cottage cheese, rolled oats, eggs, maple syrup, extract of choice , baking powder, cinnamon, and salt until smooth.
3. Stir in 3 tablespoons of chocolate chips.
4. Using an ice cream scoop, or about 3 tablespoons of the batter ,fill 9 muffin tins. Sprinkle with remaining chocolate chips. Bake for 22-25 minutes until golden brown on the top. Let cool on a wire rack for 10 minutes. It freezes well . Enjoy
