Get some flow control from you local construction store to make a wetter pour with out sacrificing strength by adding too much water and you want you concrete to dry for a bit before you float it. Think about when a kid wants to write in the cement but it's so dry they have to use a stick to write in it. That's when you want to float it on a wet slump.

They are just footings. They are buried and gone under the liner.

I’m doing some floating steps across a pond with a footer built as you detailed here. Would it be wrong to set the pillars on the slab for the steppers using block work? Or should I do sonotubes?
