  • The most popular recipe in the history of the Recipe Club podcast, Chris Ying's "Pickled" Green Beans with Ground Pork are a perfect accompaniment to rice. Salty, sour, packed with umami, and a little bit spicy, they beat the pants off Aunt Clarissa's green-bean casserole. For the spice-heads, Chris adds a hit of chopped, pickled jalapeño at the last minute for a little kick.

This is the recipe I’ve made most from recipe club! I just bought some green beans to make again later this week!

Way back when (1989, in fact) I had a dish like this in Beijing. They called it something that sounded like "swan meow." We ordered it everywhere we ate, it was so darned good.

I can't wait to try this!
BTW, I eat pickled jalapeños on my eggs for breakfast with ham and toast.

My aunt who we visited in Kentucky always had pickled canned green beans in her cellar. They were absolutely delicious. I think she also pickled corn

I’ve always wondered what cornstarch does to the meat when it’s used like this. Anyone know?

Pickled jalapeños are not that spicy tho. They add the pickley flavor but not much spice. How about adding pickled serranos peppers?

I find that when I add heat(temp) to the pickled jalapeños, it seems to add heat(spice) to them/the dish - or it's my imagination as I can't handle a lot of spicy heat.

Sure. Or pickled Thai bird chilies which we have a surplus of in our studio. But most people can get ahold of pickled jalapeños and they’re underrated!
