- This classic recipe is one of my childhood favourites, and I continue to love it just as much today. This easy stir-fry of chicken, mushrooms and tons of ginger, with its unique sauce, has a flavour unlike any other stir-fries in the repertoire of Thai cuisine. Your kids will love it, and YOU will love it too! In this video I give ways to make it spicier for grown ups, and also ways to modify it for kids :)

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes. It amazes me how adding ingredients at different intervals changes the flavours and textures. Makes each stir-fry an altogether different dish with the same ingredients.
I found you a couple of years ago and I've been eating almost nothing but Thai/South East Asian food ever since. Thank you for teaching me how to cook Thai food!
I made this tonight. It was really good and easy to make. I mostly make the Thai soups and pad krapow, so this was a nice meal. I used Korean miso and the miso paired with the ginger presents a really unique, but tasteful flavor.

Just wanted to come back and say that l made this the other day for my girlfriend who is a huge ginger chicken connoisseur, and she loved it and said it was better than any she's ever had in a restaurant. I did adapt the recipe a bit and added green peppers and carrots, but otherwise made it almost exactly like you showed.

I used to hate ginger chicken stir fry as a child but now I always make it with exxxtra ginger julienned super fine. It’s sooo good! Have to try this version! The Cambodian version just has ginger, onion and green onion so I’m curious to see how the wood ear mushroom adds to the dish! Thanks for the endless supply of delicious recipes. 😊

Interesting combination of vegetables for this stir fry. I haven’t used black fungus before got to make this dish so colorful.
Black fungus is great. It can go with anything as it does not have a flavor, but provides nice crunchy texture.
This is one of my favourite Thai dishes BUT never knew it's name. I usually point this at Thai street stalls.

Doenjang is the Korean paste that you're referring to. My mom is an expert in this dish! She cooks it the same way as you do, even till today but we add dried chillies instead and they are added with the ginger.
There is a Thai restaurant in Montana that makes a deep fried ginger chicken. It was so good. It had onions and bell pepper and a sweet sauce. If you know what I’m talking about I would really love to have that recipe. I haven’t been able to find it anywhere.

Doejang in korean. If you cant find Korean, Chinese would be soy bean paste. Dajiang. Yellow bean paste.

Can you do the same technique with galangal? As I replace ginger with galangal. know they taste different but I like the pine tree aroma.
Sure you totally can, but use younger galangal. If your galangal is old and tough, you may just wanna do big slices and don't eat it.

With chicken thigh it's not necessary cuz it's fatty and juicy on its own. The velveting comes in handy when you're dealing with lean meats or super thin slices that dry out quickly.
