    I find that weekends, especially saturdays, are the days I have the most time (and need!) for a relaxing and pretty Garden tour video. I get to dream without time constraints. And maybe make a run to the garden center if inspiration strikes 😉

    I love the idea of the scheduled garden, tour and chats, and every two weeks is quite generous. We have nothing to complain about and if you can’t keep up with that, do not worry about it we will take what we can get while you take care of yourself and everybody else.😉😁

    Recipe: Sautéed spinach with bacon and feta
    Serves 4
    Ingredients
    4 strips bacon
    3-4 tsp butter or bacon fat
    ½ med red onion, chopped
    16 oz baby leaf spinach
    1 tsp grated nutmeg
    1/2c feta cheese, crumbled
    Step 1 Cook the bacon in a large saucepan over a medium heat until crisp, remove to cutting board and cut into small pieces. Drain off all the fat except 4 tsp from the pan.
    Step 2 Sauté the onions in the reserved fat or butter in the saucepan over a medium heat until translucent.
    Step 3 Add the spinach, sauté until wilted over a medium heat, about 3 mins.
    Step 4 Once wilted, grate in the nutmeg.
    Step 5 Stir in the feta and bacon pieces then serve straight away.
    Note: Cherry tomatoes cut in half, added with the nutmeg, is a nice addition.

      Do you ever feed the cats excess milk? When I was a kid the cats always followed Dad to the barn waiting for their morning milk. Good memories. Love your channel!

    ❤ During the Birch pollening here in MN I have to make sure I take showers often, never wear the same clothes twice and never go to bed with pollen hair. At minimum I change my pillowcase every night to make sure I am not rubbing my face in a pollen pillowcase. Bless you sweet girl. He is Risen! Every single day. I love the idea of a premiere. Time doesn't matter. Can you show us how the swales are working for the orchard? And....will the pink garden door ever return? 💓💞💕

      You know, showering before bed is probably something I should be doing no matter how tired I am. Because I definitely wake up worse some morning and I wonder if its the mornings I didn't wash my hair

      @@RootsandRefugeFarm my allergist says shower at night, including washing your hair. All the pollen on your body and hair from all day is in your bed, otherwise! edit: ps - don't hang your clothes or sheets out to dry, you will bring all the pollen into your house!

      I completely commiserate with y’all! I live in the upstate of South Carolina ,and during the pollen cloud season I’m always miserably sick. Definitely will start washing my hair every night and see what happens 😅.

    I am so ready for garden tours again, and yes ... PLEASE "bore" me with all of the varieties that you're growing! My little frost tender heart is singing right now with happiness for the warm weather on the way. Thinking of your high tunnel full of peppers just makes me want to get outside in the garden. I love how you inspire me to do more. I will make sure to tag you in any future farm to table food videos. Thanks for sharing, as always ❤

    I miss your garden tours so much. I found you as soon as you started in a sever time of need. I had just finished chemotherapy chemotherapy A full hysterectomy. I started looking for others gardening without all the chemicals. I didn't want to put anything else like that in or on my body & I found My People.

    The garden is a beauty as she awakens in the spring. I could stare at it for hours! Something I always struggle with is what to feed my garden. Such as soil amendments. I never know what to use because there is so much to choose from. Love the idea of a premiere!

    Oh wow, I just realized that when I hear the sound of your wind chimes, I know that your video is playing without even watching it. Other wind chimes sounds remind me of my grandmother.

    Two great spring salads I always make are: Baby spinach, strawberries and walnuts or pecans, red onions and some soft goat cheese crumbles. You can add bacon pieces, I usually don't. Warm vinaigrette of your choice. The second salad is baby spinach, roasted beets, blue cheese crumbles or other soft cheese and toasted pecans. Also vinaigrette of your choice. I hope you have a pecan tree nearby! Besides the dressing, all the ingredients could come from your farm. Spring and Fall cooking are my favorites. Risotto with fresh mushrooms or peas and asparagus is something we wait all year for.

    Weekends are “family time”, so I almost feel like a weekday night would be a better time for many of us to veg out and watch a garden tour with you after the kids are asleep. Will watch the replay if I can’t catch it live though of course!!

    Jess, just passing on what the young lady who cuts my hair shared last week. Her son suffered horribly with allergies from pollen. He had breathing issues that required going to the ER. She started giving him honey from local hives, who were feasting on the pollen in her area. After a month, his allergy response decreased, and he didn't have to go to the ER once in a year.
    I think it makes sense, to desensitize your body with the pollens you are having problem with. Just a thought.

      My granddaughter's allergist told us to do this as she was having to have so many injections for her allergies at a young age. She was so tiny for her age and he was totally into trying to find the best results to minimize the pain and side effects of treatments. Since all the grandkids suffered from allergies we started them all on local honey. I can attest that it does work.

    There used to be a bbq/pub in town that served a smoked chicken, spinach, & artichoke dip that was Amazing. Chef never gave up the recipe, but we guessed that there was a smokiness in the cheese too. It was creamy And stretchy. It was topped with panko & finished in the wood fired pizza oven. I really miss that dip.
    Leftovers made The Best omelette filling.

    Just had gallbladder surgery on Monday. Although im very aggravated about the whole thing, i trust God and his plan. He knew i would need my energy more during planting time. And i totally understand reminding myself every day, this is my dream!!!

    Jess my Mum would of love to have "weed" asparagus. I remember growing up in Hungary Asparagus was a very expensive and rare treat an my Mum always ask for her Birthday. Of course only preserved never fresh but still watching her taking them out of the jar and crunch on them she was in Heaven. Jess I grew up with spinach stew you sautee the spinich on butter or oil crush garlic in it put some flour on it and some milk. Should be a thick runny consistency. Then we put fried meatball on the top or "legless chicken" which is breadroll soak in warm water then push out the water mix it with lots and lots of parsley and eggs and flour. Fry it and put it on the spinach. All vegetarian. Hope you like our poor people traditional Hungarian recipe. 🐇🪺🐇🪺 Happy Easter🎉

    Applebees had a Spinach salad w hot bacon dressing on it soooo good. All spinach with hard eggs, bacon crumbles,diced tomatoes, red onion and sunflower seeds....if i remember correctly. I havent been there for years but i stiil remember that salad.❤❤

    Beth here...my Italian Nonna taught me how to make Zuppa Toscana... Italian soup...and she uses spinach instead of kale...yuuum 🤤

    Winter sowing, a method of growing outdoors in enclosed containers (like milk jugs) with holes in top for rain, has reduced my shelf-and-plant-light setup efforts to tomatoes, peppers, and basil only. All others winter sown to produce strong seedlings for the garden. I used to dread the more extensive indoor setup.

    As someone with allergies and asthma, I've learned over the years to wear a dust mask anytime the pollen is really bad (and that's after many years of allergy shots). Showering at night is also a necessity. Hope you feel better soon!

    I love seeing the killdeer babies. I see a few nests worth of them on my way to see my mama goats every day during the summer. Makes me smile every time.

    You take care of yourself, Jess--glad things straightened out with Hope, and people without the responsibility of a farm don't always get the decisions that must be made, or at least planned for. I had to laugh when Winnie was blatting, she reminded me of my cat outside the door in the morning, mewing. It's like I don't feed him 2x a day, EVERY day, for every day of his little kitty life. He's so afraid of being forgotten! I tease him by saying, "Have I ever forgotten you, little guy?" That's Winnie. I am just getting my crocuses up here in VT, and still some snow, but they don't care! Have a wonderful Easter weekend, Jess...💕💙💚💛

    Have the same issue with allergies myself and have found that children’s zertec works good to keep them a lot better.

      I 2nd the children's form of medicine for adults. I take one children's benadryl bubblegum quick melt during allergy season here in DFW. Does not make me sleepy at all.

    I came/come here to learn about gardening. I think garden tours are valuable when they include tips and tricks along with knowledge. I enjoy learning about the various varieties you've planted and when you describe the flavors, textures, and uses.

    RECIPE,,,,I SAW your dormers cheese making video,tried it with cows milk,my daughter in law loves garlic so i added tons of crushed garlic ,some sweet onion and salt to some,pressed it all into a small form wrapped in cheese cloth so i can turn it over easily

    We planted our tomatoes, onions and jalapenos last weekend and this weekend is cucumbers, green beans, carrots and bell peppers. I can't wait for all that garden goodness 🤩

    You are so right about having to remind ourselves of why we do what we do. I got Lyme Disease last year. For most of the year I felt awful. But the goats, chickens and rabbits, still need their feed, water, and pastures cared for. This last week I've had a sinus infection. The farm doesn't care. And I live alone. 😵‍💫🙏
    But I do love my beasts!

    I absolutely love the idea of doing a premiere for garden tours. The reason I watch your videos is the same reason why you started making garden tours. Your passion for the garden and farm is just so lovely and relatable. I would love if you could schedule them on Saturdays, if it's early or late then hopefully the most people will be able to watch it anyways.

    "Learning when to call it" is the most important message. So grateful for you and the lessons you teach. You lead by example. Take all the time you need. (You could put up a camera on the pasture and call it a day😉)

    Jess, you take care sweet friend! The pollen count has been the highest I have ever seen and ALL of us have made several visits to the clinic to get the meds necessary to get better. Sharing in your joy of home building and great to hear about Hope expecting!!! It's definitely Spring!!!

    Oh, the sound of that wind chime! I was one of those that walked through your garden the first time. And thank you for those, you made me go back outside and get it going on again. now I have a 20x60 high tunnel, and I just up potted my tomatoes into 4" pots. I have 40 pepper plants growing from seed and 34 tomatoes from seed. Because of you.

      Oh girl, freeze dried spinach, homegrown is the bomb. Just use a tiny bit of hot water to re up it and then you can can make anything with it. Oh so good.

    Mmmmm stuffed artichoke 😊. My Italian grandma used to make it. I haven't had it since she passed so many yrs ago. I would enjoy watching you make it Jess. ❤ much love to you. God bless your beautiful family.

    nettle tea is your friend. it also helps to start drinking it months before the pollen pop.

    I make a sausage and cheese tortellini soup and throw spinach in it (even my picky eater loves it) but I do freeze dry spinach and use it in soups and as a filler with ground meats. I freeze dry the leaves whole and store them in half gallon mason jars. So excited for yall starting your new build.

    Garden tour every other week sounds great.. to make it easier maybe. Tunnels and cottage Garden /glass house tour one and in ground / pond and animal tour the second one. Leaves time to ask more questions.

    It is just me and my Hubby now, so I go out to my small garden to bring in my plunder, and bring in my basket that is empty, I can't help but eat it all. I love vegetables. LOL.

    Jess try Loose Nettle & Mullein Tea together with something else for a little flavor, it works wonders. I have not had a sinus issues in over a year. You have to start drinking a cup daily before the pollen gets here and it works wonders!!! I don't even take allergy meds anymore!!!

    This recipe is very forgiving and substitutes easily. I measure with my heart as well. I made it last night and it turned out fabulous.Hope you enjoy!
    Spinach Artichoke Casserole
    2 lbs mushrooms cleaned and sliced 1/4in thick
    3 tbsp oil or butter
    1 large onion diced
    2 10 oz bags frozen spinach or 20 oz fresh spinach
    2 sweet peppers diced
    1 lb leftover diced cooked ham (or bacon, sausage etc)
    15 oz container of ricotta cheese
    4 oz cream cheese
    1/2 cup mayonnaise
    1 cup Parmesan cheese divided
    1tbsp dried basil
    1 tsp dried oregano
    6 eggs
    2 cups mozzarella cheese shredded divided
    1/2 cup oat fiber (or bread crumbs)
    1 large jar artichokes drained well and chopped
    Garlic to taste
    Salt &pepper to taste
    Saute mushrooms in olive oil in a large Dutch oven till browned. Add onions and peppers. Cook till tender and water has released. Add spinach and let it wilt or defrost till water has released.
    Add basil, oregano, garlic, salt and pepper to taste.
    Turn off pan and add ricotta cheese, cream cheese, 1/2 the parmesan cheese and 1/2 the mozzarella cheese. Stir to combine and melt all the cheeses. After combining, scramble the six eggs and then combine with spinach mixture.
    Add the oat fiber and chopped artichokes and combine. Place in an oiled 9 x 13 baking dish and then bake in a 350 degree oven for an hour (or until firm in center. Top with rest of mozzarella and parmesan cheese and put back in oven till cheese is melted.

    If you haven't picked a time for the premiers, a Sunday evening video and chat sounds like a lovely thing.
    Spinach....my go to is spinach, cheese and bacon omelets or you could freeze them in 10 oz bags or blocks, like at the store, and save them for when the artichoke is ready.
    So happy Hope is pregnant!!! Hope you're feeling better and can enjoy your family on this glorious day! ❤
