    I love macarons, but I find they're expensive in relation to other baked goods that are a bit more substantial. I'll very rarely buy macarons, but I'll be all over brownies, nice-looking cookies, small tarts, etc.

      Same here. I learned how to bake them myself recently and the expensive price is definitely justified. They're a lot more sensitive than the other more substantial baked goods and they take a long time for just 20 of them. Bc you have to pipe every single one of the cookies by hand and then do the filling, you can't scale the process up as easily as cake. The time difference between baking 2 cakes or just one isn't that big. With macarons, doubling the batch means almost double the time as well

      I made macarons once and all the butter i had to use felt expensive (especially after the first batch was a deflated fail)

    I love Macaraons, but they definitely are a luxury treat. The grocery store here sells them for about $3 each and a local baker I like awls them for about $4 each. I’m broke, so I haven’t been able to indulge in one for quite a while. I just can’t justify the high price. I get it though… they are a specialty treat that takes skill to get them made well.

      Funny how people will pay for a muffin but not a macaron. I think people just don’t appreciate the finer things and would rather eat garbage if it’s big.

    Macarons sell out at our bakery but it is in a high-income neighborhood. Most places struggle to sell because they're just too expensive.

    I feel like macarons are great for an occasion or as gift. They're quite expensive and tiny so if im at a bakery id much prefer a large cookie along with my coffee.

    I think bakery exclusive macaroons have had their moment. Costco sells them and other stores in their bakery departments sell them. What seems to be trending where I live are the mini cakes they’re about a third of the size of the big cake and it makes it convenient to give them as a gift, you don’t have to haul a huge cake around. There are so many different flavors of cakes and fillings and so many different ways to decorate them. I would think that might be worth a try.

      I used to live next to a store that had mini two bite cheese cakes. I LOVED those things so much I bought 3 a day at $2.50 a pop.

    I agree with everyone here with the price problems, I’ve made them from scratch at home and they do take a while and a lot of practice, but for a professional bakery that is the case for many items, but for the size of macarons and the cost it would take to eat a reasonable amount it would be at least four times the price as simply getting a pastry or a slice of cake 😭

      Macarons are so good but you never feel satisfied after just one and they’re so expensive. 2 medium sized cookies or a slice of cake are much more satisfying after a single purchase

      @@lexa_power yeah, but macaron tasted better usually (for me anyway). I don't eat sweet to get the bang for my buck, I want it for the taste. Otherwise, I wouldn't eat sweet, since they're not healthy consuming in large amount.

      Fair point. I tend to buy them sometimes but when I get them they're normally like a dollar or so each. The main place I buy them has a point system too so I usually use points for it. They're a nice snack every once in a while

      Cake is like the worst food you could have picked for this comparison, it loses its attraction after like 2 bites when you realise the outside of the cake that tastes best is only 1% of the cake and the inside is usually a very boring mush that sucks to work through unless it’s a very specific very strong flavour (like chocolate or coffee)

      @@Aeronaut.18 They are soooo good, they are chewy and soft with a candy coating on the outside that breaks easily and the filling almost melts in your mouth. And they taste like whatever flavor you make them. Raspberry, chocolate, matcha, vanilla, lemon, etc. They can be pretty difficult to make because If even 1 thing is slightly off, it can ruin how the cookie bakes. So that's probably why they are so expensive to buy.

    Maybe it's time to do limited edition macarons. Reduce the variety offered. Always produce an assortment of the top three flavors. Then, feature one special flavor per day or week.
    Small cakes and hand pies might sell well.

    Perhaps it's the price? My mother suddenly stopped buying macarons for me when I was younger. I guess cookies, brownies, and other treats were more filling and less expensive? I would love to eat a macaron again though sometime.

      They're so difficult to make and almond flour can be expensive. Mariano's and Jewel usually have them if you have one near you.

      I mean, unless you're allergic or something.
      Almond flour is expensive because... Well, do you realize how many almonds have to be crushed to make one small bag of flour? And almonds are an "expensive" nut as it is! Almonds are a "hard" nut, too. It takes an enormous amount of milling to get it to a consistency for flour.
      In the Depression, people collected and ground their own acorn flour.
      If you use it just for taste, you could use wheat flour and just add a few drops of almond extract.
      And....they're really not that difficult to make. I suppose the meringue is the part most people have trouble with? I don't know.... I've always enjoyed baking, so it's not a "chore" to me.

    Maybe having a couple of staple flavors and some flavors on rotation could help. If they don't sell super well, having too many options could be overwhelming to customers.

    I absolutely LOVE macarons! It is the costly prices that usually hold me back. I know the prices are reasonable considering how hard macarons are to make. However, I will splurge on special occasions for them. My favorite things to order are both macarons and any chocolate or other sweet pastries.
    PS. I wish the French bakery I went to would lable their macarons flavors like you do 😭

      That's a good idea! Local customers' tastes may or may not be the same as the tastes of strangers on the Internet, so a suggestion box would definitely work to see what the local community would like. ^^

      And just look at your sales figures, if you keep underselling your macarons, then you van try all sorts of gimmicky stuff to try to promote them more with questionable chance of success, or you can realise they're not that in demand and focus on other things that you continually sell out off.

    Macarons, like bonbons, are a small, but expensive treat. They're something you buy as a gift or for a special occasion. Offer a variety of flavors in pretty gift boxes in different sizes. You can let people pick out the flavors themselves, so you don't have to worry about different preferences or allergies.

    I love macaroons but as many has commented here, the price is high for what you get. When I buy cakes at a bakery it’s usually Princess cake or Budapest roll (love the classic version with mandarin slices or the newfangled one with raspberries). I live in Sweden and we are huge cake lovers! I like that we can buy a whole cake, a roll that is for fewer people or a single piece, even if it’s a cake that’s usually sold whole.

      Do you eat a lot of high sugar and sweet things? I use too and they didn’t taste too sweet then.
      Lessened my sweet intake and suddenly everything’s really sweet XD

      It depends on the type of meringue this is used. I use Swiss meringue to make macarons and they aren’t really sweet. I’m Asian and we use the term “not too sweet” to compliment dessert

    As someone who was lucky enough to try a lot of macarons, even though I love them, I would avoid them in bakeries since they tend to be pricey. I understand they are priced as X because of how time consuming and challenging it is to make them, but when theres cheaper, bigger alternatives my eyes end up looking there

      Learning how to make them is hard actually making them once you know how is surprisingly easy. It’s something people just love so they’ll pay the extra penny for them. Crème brûlée is another very easy to make thing that’s excessively over priced. Just make friends with a hobby baker and they’ll happily make you macarons if you tell them how tasty they are!

    macarons are my favorite thing to get from a bakery (along with cannolis). I think as some people pointed out they’re just expensive relative to what you’re getting, and they’re one of those things where you either really like them or don’t.

    I adore macarons. Sometimes the only thing preventing me from ordering them would be the price, but I love them so much. They're so aesthetically pleasing and I adore the texture of them and the variety of flavours and colours you can get them in. Yours look amazing!!!

    You should advertise that they are gluten free. I didn’t know they were until my husband was diagnosed with celiac disease and he loves pastries so we were happy to find out about macarons!!

    I'm a pastry chef and I have noticed they're not as popular as they used to be. No one asks me for them anymore. There's also a local French patisserie in my town and macarons are their least sold product. So sad. I love them!

      It’s the price vs the substance you actually get. Like I love them but I’m not paying $8 for a two bite cookie. Also pre/factory ones don’t taste as great so I usually prefer fresh ones

    As someone who loves macarons and tries to get then whenever I can, while price is a big sticking point, for me, I'm more inclined to get them when the flavors are experimental or my favorite rotating/seasonal is in. The macaron specialty bakery I go to regularly changes out some of their flavors or even has character macarons that increase my likelihood if getting them.
    I think the fad has definitely passed, but having great quality and selection will definitely garner you repeat regular customers.

      I feel like they're great at a place known for its coffee/tea. Because they aren't filling like a typical pastry, they're more of an accompaniment to other food & beverages. The hmmm I could get the specialty latte, or I could get a pour over and add a macaron for sweetness. They're a replacement for a sweetened beverage not a pastry.

    I work at a French bakery, and we make giant size macarons that are $5 a piece, no tax. I think with the price of almond flour, it is well worth the final cost. It is a big macaron! It is one of our best sellers!

      That’s a good price compared to other places. It’s usually $5 for one average size where I live. I’d buy the giant macaron over any other pastry in a heart beat.

      I would definitely say a lot of people love it based on texture. It does taste nice but the texture is what makes them amazing due to it being crunchy, soft and moose at the same time. You don't really find a lot of foods like that

    I adore them but they are soooooo expensive 😢 I also love softer flavors like lavender, lemon, rose, etc. Seems like some people make such sweet ones these days! If a set of 4 is a good price I would definitely try them!

      For me it's also all the sweet flavors. I enjoy the fruit ones (lemon, raseberry, blood orange, blueberry, etc.) because if I wanted chocolate I'd get a brownie. Unfortunately most places usually only have lemon

    I also agree that the element of choice is probably preventing people from buying them. If I can’t choose which flavor to try, I’d rather be able to buy an assortment for a great value or I will just pick something else entirely. Lilit the choices and rotate out the featured flavor and people will have an easier time choosing AND be motivated to try the limited edition flavor before it’s gone

      Absolutely agree! I buy them quite rarely, but in a place where I do it after all, they have only 4 tastes. I’m just not able to choose from larger amount in other places, so in other bakeries I prefer other products

    I'd never had macarons until a couple years ago. They were wonderful! It's the price that's kept me from buying them since. I noticed you have a cotton candy flavor, and that would be hard for me to resist, but likely I'd only try it once and opt for something with a better price:size ratio after that.
    Those certainly do look good though... I love how you have them displayed.

    One trick is to make themed ones. Different designs and colors. Snowmen, red ones with a santa belt, flag colors, heart shaped, etc. It makes the price seem justifiable for customers because of how special they look.

    I always buy macarons from a local vendor at our farmers market every Saturday! Luckily the price from her macarons are pretty good, so I can buy them. I love the variety of different flavors and when she experiments on new flavors! My favorite is her churro Dulce de leche!

    I eat 3 macaroons once a week as ‘self care.’ I’ve been doing it for a couple years now. I have found that out of all the flavors that are offered, no matter what I try, I always go back to pistachio. In fact I got a text from a friend today that their fave coffee spot has pistachio macarons back in stock. He’s a good friend who truly understands me. 💚

    Here in Nigeria, we have others pasteries that sell out e.g eggrolls, chicken/beef/fish pies, sausage rolls. As a child, i grew up craving macarons as i saw them in movies and always wanted to taste them. Then i did as an adult who could eventually afford them and crazily i didn’t like how they tasted so I'm currently on a thrill of croissants and whatever stuffings in it, love them.😅

      I also had seen them for years but could not find any locally. When they became super popular in recent years I finally got the chance to taste them and I was so sure I'd love them, but I was kind of disappointed after trying them. They're not terrible by any means, but I guess I had built it up in my mind that they would be heavenly. Now I think for many people macarons are about the aesthetic quality. They're "cute" as far as foods go to the point that there are stickers and stationary in a macaron theme.

    They are my favorited and i have heard many oeople say the same. However, they sell very expensive. I think the price deters people from buying often and only leave themfor special occasion. I would say stop selling them everyday and have them available like once a month, holidays and soecial orders. I that will drive yhe demand.

    I only buy macarons on special occasions and always in a box with ten of them, mostly of different tastes. I won't buy one macaron with my coffee in a coffee shop, but the ones I buy 3-4 times a
    year are absolutely delicious and I think I'll never stop having them as celebration sweets

    I normally like cake. Like carrot cake, red velvet, cheesecake, or if they have it, lemon pound cake. I also love trying cookies. I will admit though, macaroons would be at the bottom of the list if I was choosing. Only because I find macaroons more of like a craving or a snack type thing when I just finished eating and I want something sweet while watching my favorite tv show. Macaroons are still very good, but I think they’re taking a back seat to all the things I just listed lol.

    They are reasonably priced for their level of effort, but I don't think the final product is ever worth all that effort! Maybe I haven't had an excellent one, though. I'd rather have a mochi!

      ⁠@@lynnecarnivale6414 mochi is a japanese rice cake with ice cream in the center. the outer layer is commonly coated in powdered sugar and has a dough like texture. very delicious sweet snack, i’d definitely give it a try, but it’s not for everyone! hope this helps

    my favourite is a croissant almost cut in half; in between there is cream cheese, fresh blueberries and on top it’s sprinkled with baking sugar
    pretty simple yet so tasty I can’t get enough of it
    and that bakery changes the berry depending on the season of the year!

    Macarons have became insanely widely available last few years. I remember there didn’t used to be any at Walmart 5 years ago to now there being every flavor at any supermarket. It’s gonna take time for people to discover, experience, and fall in love with a pastry. Once they do they will notice the quality of big retail vs fresh bakery 😊

      Rarely are they ADVERTISED as GF though! I would think that would really help! Personally I can't have them unless everything was wiped down in between, but plenty of people are on GF diets rather than allergic and they would appreciate the indication.

    I love small sample sized treats, not macarons or cookies but palm sized slices of cakes, fruit tarts or mousse domes. When i used to go to Porto's in LA they'd have a whole case full of different desserts that never costed more than $4 a piece. I could buy a bunch of stuff and have a nice sit down sample tray. Plus when it came time to order a bigger thing I could be comfortable ordering something new because I knew what it tasted like at a reasonable price.

    My son would be your best macaroons customer! I made him macaroons when he was 4… I found a recipe in the Gourmet magazine. I make them every now and again… he’s now, and sneaks them on the shopping list when he goes to market, or into cart when we go together! This video is a good reminder!

    I get fresh plain croissants, a sourdough loaf and/or a good seed loaf from my local bakery❤. I take my croissants seriously and this particular place really doesn’t disappoint, and all their loaves are amazing. I’m not much of a sweet tooth, and it shows that few customers are. Walking in there past 9am you’re lucky to find a croissant left over. By 4pm most of the tarts and macarons are still just chilling there, untouched

Most likely having to do with the price & portion of that specific pastry. You'll see it's popularity increase at certain times now because of social media. It's a "postable" food item. It's popularity comes & goes. Unlike muffins, bagels, cupcakes and doughnuts. Those have been & will remain classic pastries. They'll never go out of style 🍩🙌🏼🤤

    Where I live, macaroons are for tourists and not locals. They're a cute and sweet gift that are pleasing to look at even if the flavor isn't your cup of tea, so they make good gifts. Other than that, it's not your first pick when you walk into a bakery that has other yummy goods to offer. It also doesn't sit well with my coffee (or tea) personally.

    I love macarons ❤ they are the perfect consistency, small,not over powering flavors but just enough to taste and want more, you get a small crunchy but soft and chewy texture as eating it, and they are endless with different flavors I could eat them all the time :) they are perfect to share or when you want a small treat at any time too. I would of bought a lot if I was there at the opening :)

    In our local bakeries SWEET BREAD is very popular! It has a unique taste. Not sure but I believe it could be called Portuguese Sweet Bread. I'm sure there are recipes online. During the Easter season, they bake a hard boiled egg on top of the sweet bread... and it's still in the shell. Those are quite popular! Chocolate chip cookies, fruit tarts, lemon squares and all types of muffins are big sellers too. Cake and cupcakes could be last but still good, haha.

    Keep making macarons - they are too time consuming/complicated to make at home, yet so delicious, and beautiful.

    I absolutely love macarons and have only had them a few times because I can’t find any at the bakeries near me. I know I can buy them at local stores, but I really want the feeling of walking out of a bakery with a box of fresh, handmade macarons 🥲
