To be honest I like that kind of food. Some dishes in Belarus and Poland are alike (pancakes) and some are very different (the cottage cheese thingies you had). We have borscht (barszcz) but it’s different. How interesting! In Poland we have milk bars (bary mleczne) where similar food is served. Very cheap and delicious. I recommend to have that experience in Poland along with eating pierogi and zapiekanki😉
Pierogi absolutely rock! Can't buy them in this Third World hell-hole I live in, but making them is always entertaining - simmered then pan-finish. Second only to Gorecki's Third Symphony amongst Poland great gifts to Civilization. All the best from a cabin in a swamp in a rain-forest in New Zealand.

Its actually holodnik, a taditional cold soup with zucchini, cucumber, beetroot, ...i also prefer a good borschtsch

Not as often as say in South East Asian. There are not as many affordable options here. For example there is no street food
