You may run into an issue with the space under the door to the floor. When you add the sub-flooring and flooring, you may have to cut a lot more off of the bottom of the door.
How is it even possible to straight lumber today!!! I tried to do this at my farm and new wood was so crooked that it was worse to deal with than the sloped floor.

Ya, we factored that in. That entire portion of the floor was sagging so we know we need to tackle that.
