    Re: peeling eggs easily
Cold water or peeling in water doesn't actually make a huge difference if eggs are hard to peel. If you have an issue getting the shell off, it's more than likely due to the freshness of the eggs themselves. The fresher the egg, the lower the pH level of the albumen (otherwise known as the egg white). When boiled, this causes the albumen to bond to the membrane inside the egg, not to the shell itself.
In order to combat this issue, vinegar can be added to the water during cooking. The acid in the vinegar changes the structure of the shell itself and the inner membrane doesn't bond as strongly with the albumen.
This works for me every time, recommended to me by the family I get eggs from at the local farmer's market every few weeks ☺️

Absolutely correct about the age of the eggs being the culprit to whether they're difficult or easy to peel. Fresh eggs (young) are more difficult to peel. Eggs that have aged a bit are much easier. My grandfather was a farmer. Ask any farmer, or his wife, and they'll tell you the same thing.

I started using vinegar a few years back myself. Great tip. Someone suggested salt, however I didn't find that useful at all.

I found this the other day.
If you boil your egg, cool them down as normal. (Crack the big end of the egg.) Then, take a container, fill it with water, place the egg inside with a small amount of air, and then shake vigorously. You will see the egg shell start to come off, then take it out of the container and easily peel the rest of the shell off.
A jar of a deli container works great. The egg needs room to move.

Tip for cooking rice: buy a rice cooker and in 20 minutes with no watching, you get cooked rice. Plus, it keeps it warm. And once the rice has been cooled and it's a day or two old, pour oil in a pan and make fried rice. Finish it with a dash or two of soy sauce and you have one of the best rice meal ever.

When I was stationed in Germany, I was introduced to the kiwi fruit. I had never had it before, and my girlfriend at that time, cut it up and put it in a fruit salad. I was amazed at how wonderful it tasted. And then she introduced me to Keewee jelly. It was amazing! Since then, having come back to the United States, I bought Keewee at the grocery store and introduced it to my mother, who had never had it before. She loved it. I, on the other hand, developed hives around my mouth and my tongue swelled up. Somewhere along the line I developed an allergy. I don’t know if I was allergic to the fruit or perhaps an insecticide that was on it. Anyway, I’m glad you’re back. I’ll see this again: when you’re in Wyoming, let me know, and lunch is on me.

One of my favorite lists. However, using a hand mixer to make mashed potatoes very often turns them into a gluey mess. Hand mashing keeps them from turning to glue. If you want lump free mashed potatoes, use a potato ricer or a food mill. If you are very careful, you can mash potatoes with a hand mixer, but you have mix them for long. Usually, by the time you get your potatoes to lump-free, you have turned your mash into wallpaper paste.

When I harvest garlic (especially when my children were home, and game nights needed a quicker dinner) I processed and froze tablespoons of garlic. But I blanche the garlic, super easy to peel and not use a microwave (like tomatoes or peaches for peeling) mashed them just a little, and put in the food processor, just a bit of good olive oil, and scoop 1 tbs onto a sheet pan. freeze, then put 10 or so garlic scoops into small bags for a week's prep. ( we like garlic. )

You can make muffin mix in a waffle maker as well! Favorite easy dinner meal, Jiffy cornbread mix, makes two waffles, top with honey, fresh made or warmed up chili and cheese. SO YUMMY!
And garlic cloves you just have to crack back the opposite direction of the curve and it peels right off!
ALSO, I use neither a hand mixer nor a hand blender, I use a drill in my kitchen, yeah, it's a single paddle which won't work for some things, but it works for most I need it for and it's controllable variable speed!

I've never made rice on the stove, always used a microwave. And you can jazz it up easily. Yum.

It spits boiling water at you, when you cook it on the stove. So I gave up and use the microwave too. ♥️

Peanut butter cookies can be made with half the sugar.
    1cup peanut butter
½ cup sugar or brown sugar (your choice)
    1 egg
Mix well, roll into medium balls.
Place on baking tray and press with a fork in an X pattern.
Bake at 350⁰ for 10 minutes.
Still gluten free. And these won't be crispy.

I have a 2-ingredient cookie recipe: I mashed banana and 1 cup of quick oats. Scoop and bake at 350 for 10-18 minutes. You can also do this with a half cup of applesauce with the cup of quick oats. Bake the same as the banana ones. Delicious and even gluten free!

You don’t have to refrigerate butter believe it or not. That way it’s always soft.

A hack I discovered is add plain coffee creamer to your mashed potatoes.
Makes them rich, creamy and delicious 😋

When picking citrus for juicing at the store, pick the fruit with more heft, as it will produce more juice.

You can also use a ice cream scooper or a measuring cup to scoop your pancake batter, very consistent.

Frying the potato after boiling in soup may not work as intended. However, baking in a generous amount of fat makes the British roasted potatoes, and they are so frigging good!

@debbieellett9093 it's already saturated with liquid after boiling, so it just crisps up the outside.

Put a 2 inch piece of celery stalk in your bag of bread to keep it soft and put a piece of bread in your brown sugar to keep it soft.
