In Thailand, we call these "Giant Tokyo Snacks" , not crêpe. When we make a crêpe, we use "le râteau à crêpe" to make it round. We use the back of ladle to make "Tokyo snacks" in round shape( in Thai we call "Kanom Tokyo"). These Kanom Tokyo are giant. On the street, we see oftens the smaller one.
but the crispy Kanom tokyo use the flour similar to Thai style crepe. 😆 The difference just the way to round ( Kanom Tokyo a bit thicker than crepe ) and the fillings. There is not much choice for Kanom Tokyo fillings. Original Thai kanom Tokyo was soft ( not crispy ). It might be modified from Japanese Dorayaki or pancake but skiner. This is crispy crepe. In Thailand, one this size is simply called crepe and the smaller one is called Tokyo snack(both have different topping style but are both made by sweet and crispy flour). This store is making a mix of both but is mainly like crepe. They use the Tokyo snack’s lacing technique for making the crunches part. I’ll take a guess of their toppings. #1,4,5 Omelette, Chilled minced pork with pepper, Sliced hotdog, Mayo, Sweet chilli sauce, Quail eggs, Soy sauce, White pepper. #2 Thai sweet chilli paste, Pulled crab stick, squids, shrimps, sweet chilli sauce, tomyum powder, coriander. #3 Japanese seaweed, ebiko, Quail egg, Mayo, Sweet chilli paste. #6 Whipped duck egg white with sugar, Foi Thong, Raisins, Chocolate. #7 Like #2 but with American Mozzarella cheese.
Surekha Surea yes but these crepes batter are made with flour and eggs , whilst our dosas are made with rice powder/ rice flour . Both though are delicious. I am so hungry now 😆
A bit of advice from a Thai: that creamy white sauce they squeezed on is Thai-style salad dressing (some of us here call it mayonnaise, although it's not) and it's disgustingly sweet and ruins everything it touches. Tell the vendor to skip that stuff.

This food is influenced by the French since 17s. It is similar to Dosa but it is not. They do not put masala in it. Masala does not always taste good for foreigners. Today, Thai people call it "Tokyo" because it was first sold in Japanese department store called "Thai-Daimaru".
