Ingredients for pastry(饼皮材料) :
125g butter(牛油)
50g / 3/8 cup icing sugar (糖粉)
250g / 2 cups plain flour (普通面粉)
1 egg lightly beaten (鸡蛋轻轻打散)
Ingredients for the filling(芝士馅) :
250g / 9 oz cream cheese (奶油芝士)
30g / 2 tbsp butter (牛油)
50g / 1/4 cup caster sugar (细砂糖)
1 egg (鸡蛋)
50g / 1/4 cup whipping cream (动物性鲜奶油)
1 tsp lemon juice (柠檬汁)
20g /2 tbsp plain flour (普通面粉)
250g blueberry jam (蓝莓果酱)
Serving size: 6cm tart mould - 26 portions

Tart:
1) Cut 125g butter to sticks
2) Add 250g plain flour
3) Add 50g icing sugar
4) Mix into light breadcrumbs
5) add in lightly beaten egg
6) Mix until sticky, then change to use hand to form into dough. Knead into soft dough
7) Cover in cling film and put inside fridge for 30 mins
Filling
1) 250g cream cheese
2) 30g butter
3) Add tgt and mix with hand mixer
4) After mixed tgt, add 50g caster sugar
5) Hand mixer again, then use spatula to scrape the side
6) add 1 egg
7) Hand mixer again, then use spatula to scrape the side
8) Add 50g whipping cream
9) Hand mixer again
10) Add 1tsp lemon juice
11) Add 20g plain flour
12) Mix with spatula, pour into piping bag
1) Divide dough into small portion and press onto tart mould
2) Prick some holes on the pastry
3) Bake in preheated oven 180c for 15 mins
4) Fill half of tart with cheese fillings, then manually add blueberry jam, then fill up remaining
5) Decorate with blueberry jam
6) Bake at 180c for 10-12 mins

hi :) I have 2 questions for you:
Did you leave the baked tart shells to cool completely before adding in the cheese filling?
Also, did you leave the cheese tarts to cool down at room temperature before removing from tart pans?

For the first question, yes i left the tart to cool down before adding the fillings
For the second question, i took the tart out from the “tart pan” first then add the fillings. So, it’s easier cause if you accidentally add to much fillings it’s hard to take out the cheese tart from the tart pan as the cheese might drop.

Hi, do I need to let the pastry cool down to room temperature then add in the filling?
How do I determine the filling is cook?
@@janetlim3168 hi, I would suggest to let the pasty cool down for 5 minutes before filling it up. Doesn’t need to be room temperature before you can fill it. You can follow the baking time as instructed in this video to ensure the filling is cooked

我前天试做了这款蛋糕,因为是新手的关系我做错了很多程序,我是做6寸模具本来应该所有材料都除一半,结果我芝士放多了后来才发现,然后我因为芝士和奶油都太硬就直接拿去坐热水搅直融化才发现是可以用mixer 直接打的,然后我又蛋黄蛋白分开打,等把蛋白打发我再从重看视频才发现原来是可以直接整个单一齐搅拌的(也是这次重看我才发现奶油和芝士是不需要热水加热融化的😢)可是当一切都错了我就将错就错直接放进去烤箱烤,哦还有我因为没有柠檬所以直接省略掉了,辛好最后的结果是很成功的,蛋糕因为芝士放多了所以在烤的时候有鼓起来可是因为上面放了crumble 所以没有流出来,最后的最后我在冰箱冷藏一晚后拿出来要拖模的时候才发现我底下忘了铺烘焙纸所以蛋糕没办法拿下来只能就着蛋糕地盘切好了拿来吃😅😅
