  • Back to cooking this week and it's another easy recipe to make on a Sunday or during the week. Andy is grilling some chicken thighs on the BBQ and cooking up a slightly different version of pilaf using bulgur wheat instead of rice.

    As a non drinker I feel ya Andy. I don't really have a reason or explanation why I don't drink (not that you need one). And like you said sometimes you just don't want to have that conversation. So drinking something people assume is alcohol is just easier.

      I lost my oldest daughter from complications due to acute alcoholism. After that experience, I just have no interest in drinking alcohol. I don’t lecture people about it, I just politely decline to imbibe.

      ​@@dwjr5129 I'm so sorry for your loss stranger. I've lost my whole family to alcohol related accidents or diseases and put myself through rehab last year. As a person who loves food, cooking and living in Australia it's sometimes just easier to have something in hand to avoid those conversations sometimes that, like Andy says, you just sometimes don't want to have.
      I hope you're coping okay with life after loss ❤️‍🩹 no one should have to lose a child.

    Myself and husband always watch your videos every Sunday. I ordered the essential scraper for my husband as a surprise as he loves cooking. From the date I ordered it, to it being delivered through our front door only took a week. Really impressed as we live in the UK.

    Love this Catlyn on a non alchoholic wine that's not trying to be a wine. I'm a wine enthusiast and the science just doesn't work around non alchoholic wines so this is actually a really novel take on the concept and I'm going to try!

    Bulgur wheat is used in making tabbouleh, a common Middle Eastern salad dish, this was a staple in Australia during the 80's & 90's

    I have a recently acquired ceramic nonstick frying pan. Absolute game changer. Better nonstick properties than any teflon I’ve ever owned, so easy to clean, just hot soapy water with a sponge. Also oven-safe up to 180 Celsius so handy 😊

    Not sure if this is a thing in Australia, but for cleaning stainless steel pans, I use a product called Bar Keepers Friend. It's a fine powder, so wet the pan with soapy water and add it to the place that needs scrubbing. Depending on the stain or the stuck on food, it may need a bit more elbow grease, but it works really well and doesn't scratch the pan.

    Love it when you guys mention other chefs/creators. Love seeing what else is out there because, many times, you have to wait a full week before your favourites (including these two channels) post another video 😩😁
    Mind you, I have 260+ recipe and dessert UA-cam videos to watch but yours, chef Jack, Kenji, Marion, Hot Thai Kitchen and Chef John have all been watched.

    In Australia, Gumption for cleaning stainless pans so they sparkle. Honestly, it cleans everything, your whole kitchen and bathroom.

    How to clean stainless steel pans with stuff burnt on / stains: part-fill with water, add a few spoons of bicarb soda, bring to a simmer and simmer for a bit, then turn off and allow to cool. Then tip out the water and soda and clean basically as normal with detergent and a scrubbing brush. The bicarb soda lifts the burnt stuff and any stain off the bottom.

    Mum and my sisters cook all their more smelly foods outdoors. This way fish and curries are not lingering throughout, particularly if the house is open styled. This works well for warmer climates which have their grills and kitchens out back under the lanai. Here in NYC grilling/cooking is not permitted on my balcony 🤷‍♀️

    I'd love to see a party food episode. Something like a few varieties of cob loaf (chilli con carne cob loaf is my favourite) and some dips and things like that. Maybe like a gooey baked Camembert dip would be great too.

    Non-alcoholic beers... I thought they were stupid at first, but since craft brewers started making them i'm a big convert as they can be delicious after all. We now pretty much always have a 6er of Emerson's Little Bird sitting in the fridge - its really light and refreshing in the way some craft beers just aren't.

    Re Brisket on the smoker - I really want to try a whole chuck roast as an alternative, especially given how expensive Brisket is getting bc its such a BBQ fad at the moment down in NZ/Aus.

    I don't really like non alcoholic beer either, but drinking water or coke all night long sucks as well.
    What works for me is mixing sparkling water with apple juice, 1:1 ratio. Not too sweet, and very refreshing. And every pub/restaurant can make that.

    If you really like Pilaff, I would highly recommend a Pakistani dish called Yakhni Pulao. You would absolutely love it.

    I've found bulgur in quite a few supermarkets these days. Someone will correct me if I'm wrong, but I think bulgar is 'groats'; wheat that's been cracked, steamed and then dried.

    Learning to make 'a pilaf' of some kind, is fundamental to good thrifty cookery. In my opinion, it's the best way to use all the little leftovers in the fridge, and turn them into a really meal.

    pardon my language but I am so fucking mad. for some reason i have not gotten a SINGLE notification about any of the new uploads on the BOH channel for the past ~ 6 months. I don't know WHAT changed but this video finally popped in my notifications which made me go "what the f?! is Andy finally reviving the BOH channel?!" and then I go to the video history and I realize that you guys have been uploading consistently this ENTIRE time.     With regards to trying to store leftover hollandaise, you'd need to add some type or starch thickener or even xanthan gum in some way along the process. That'll keep the emulsion together for a few days maybe in the fridge, especially the xanthan gum since it stabilizes regardless of temperature so you don't even need to bring anything to a boil to ensure the emulsion will hold.
    Separately, I've a question or a challenge for Andy. You love sticky toffee pudding, I love sticky toffee pudding, pretty much everyone I know likes it. But, a friend of mine is lactose intolerant and potentially gluten intolerant. How could you adapt a sticky toffee pudding recipe and make it both lactose and gluten free without it just turning into a bowl of slop?

      Not at this stage, I'd want to spend a lot of time learning about knives before I decided to start making them. It's a bit of an art.

    My lovely wife has a couple of bottles of Mcguigan Zero Sauv Blanc (alcohol free) at home, they taste almost as good as their normal Sauv Blanc if you’re looking for another non alcoholic drink to share?

      I can’t speak for Andy, but opaque bottles are best for extra virgin oils. Plus the long spout allows for precise measurements. Also, as a content creator I would be wary of promoting one brand over another unless sponsored, so the stainless steel dispenser does away with this dilemma too. Peas and lovage from NZ
