During the 1950s-1960s, my mother used to serve what she called "shirred eggs" for the evening meal. Canned tomato juice, eggs, a bit of salt and pepper ... baked in the oven. Came out hot with the egg yolks still a bit runny. My absolutely favorite comfort food that young children love! Breakfast, lunch, or dinner. Yum!!!

Love it. I’ve Done it with thinly sliced onion and instead of tomatoes I use potato either sliced or cut up into small cubes. The potato is then coated with some nice warm spices; Garum Masala, turmeric, paprika, onion and garlic salt, Thyme and salt/pepper. Add eggs once potato is cooked. I then grate some cheese over the top. Please try and let me know what you think

I love the recipe length in your cookbook. If you make it too long and detailed, it becomes onerous. By making it short and succinct, you learn the recipe by making mistakes and tweaking yourself. Instead of cooking it one perfectly and then ticking it off the list. Love your content 🥦

Hey Guys I'm unable to get toast any other way, my 22 year old daughter hates how I use that grill and hate the toaster I've also thought of coffee storage. I'm in Melbourne with Cancer. The place is called Caritus Christi. Unfortunately this is where I come when there is no treatment available for me anymore. It's amazing and so restful and the staff appear hand picked. Andy the food here is amazing. 2 chefs , don't know full background but evertime they have fish I'm over the moon . The food offered is so special and I am so grateful to have restaurant style food.😢

Went along to a small gin distillery in Stanthorpe yesterday, The Ginyard. They've only just opened and released their first batch of gins. Tried 6, all were nice but really liked 3. Very friendly couple run it and imo, it's well worth the visit. They have limited opening times, basically Saturdays from 11am so it may be tricky to get there. Just another really nice place to visit if you're ever up on the Granite Belt.
Yeah here in the States, gin isn't as popular as tequila or whiskey or vodka. However, I'm a huge fan of gin. My personal favorites are Cruxland from South Africa and Castle & Key Roots of Ruin from Kentucky. Most of the time I'll drink it neat while watching a show. As for a restaurant, something small scale and casual would be cool. Lunch and dinner only, farm to table menu. A small shop out front selling local goods would be nice also.
I have that same love/ hate relationship with eggs too, Katelyn. Have never been able to work out why they make me feel sick on occasion. Southland cheese rolls, yummm. I make them for my Auckland friends and they’re always amazed they taste so good. It may be controversial but I add onion soup mix, as that’s how we grew up eating them.
If you have a big tub of coffee beans like that, it would better to portion out (e.g. ~250g per ziplock bag) and store them in the freezer. You can defrost a bag at a time or grind straight from frozen, it's even better as it cools the burrs, but might need to dial it a bit coarser at first.
My favorite Thai meal I've ever had was a Lime beef recipe I had in San Jose about 24 years ago, it might have a degree of memory enhancement, but I remember it being really good.

Thai food - THE most underrated Thai dish that's so hard to get in heaps of restaurants is Chiang Mai Noodle. I think probably because it's more of a northern Thai dish (hence the dame) but man... It needs WAY more love.
I highly recommend trying Peppermint Crescent in Buderim. It's a Taiwanese-Japanese fusion restaurant. I recently visited with my in-laws from Taiwan, and we all agreed that their spicy beef noodle soup is even better than the one at Niu Baba Beef Noodle in Taipei, especially considering the price difference.
For toast, get a Balmuda. We brought one back with us from Japan in 2022. Perfect toast every time! Was hilarious taking it on a dash-8 back to Canberra 😂

ONA is the best coffee ever. Try the Black Betty. The owner Sasha Sestic won the world best barista competition in Italy years ago. I'm from Canberra, it's seriously THE BEST coffee I've ever had. He makes everything in house.

I have a gin distillery approx 30mins drive from home with some really nice ( imo ) gins and liqueurs called Magpie Distilling, if you ever see any of there products hopefully you’ll pick one up and try them 😊
MASL = Meters Above Sea Level. Coffee grown at higher sea levels has denser beans and tends to roast better. Anything over 1500m (like your 1850m La Grenada) is on the higher end (the peak is around 3000m) and tends to be slightly more bitter but generally better tasting. I don't care how airtight the container is - that still sounds delicious :)
That's the problem with tomatoes, they come out the pan hotter than the sun!!! Putting the whole pan in a shallow bath of cold water before serving for 5 mins solves it.

Ever try roasting your own coffee? I've been doing it for over 15 years. Roasted coffee loses flavor quickly. There's the "Rule of 15s" Green/unroasted coffee is good for 15 months. Roasted coffee beans are good for 15 days. Ground coffee is good for 15 minutes. After those points in time, the coffee flavors deteriorate. Once you drink freshly roasted coffee, it's hard to drink anything else. Love your content. Only recently stumbled on it. I've been watching mostly this channel. Still trying to find the video where youexplain how to care for that huge cutting board.
