Okay, but can we talk about Darren and Trisha’s fight scene? Like, oh my god, the layers to this. First of all, Darren comes in with his whole 'I’m right because I read one self-help book' energy, and Trisha just destroys him with that line about how he’s all talk and no action. Honestly, she didn’t have to come for his throat like that, but was she wrong? NO. but then, and here’s where it gets real, when he said, 'At least I’m trying-what are you even doing, Trisha?' and the camera cuts to her face? OOF. You could feel her holding back tears, but she wasn’t going to let him see her cry. That right there is character development because early season Trisha would’ve screamed back, but now she’s like, 'I’m not wasting my energy on this guy.' and don’t even get me started on how they shot the scene. The lighting? Perfectly dim with just enough shadow to make them look like they’re in two separate worlds and that little shaky camera effect when Trisha starts walking out of the room?? Chef’s kiss. It’s like the director was telling us that their relationship is falling apart right before our eyes. I mean, sure, Darren made some valid points, but let’s not forget that he’s the one who ghosted her in Episode 4 and only came crawling back when he needed her help. Like, bruh, accountability much? Anyway, Trisha deserves better, and I said what I said. Also, if they don’t play that song from the trailer during their inevitable makeup scene, I’m rioting.
11:16 you can use honey blocks to slow the items down, just make one of the edges of the stream honey and line the items up with a couple of sea pickles
this would slow the travel speed of the items down, but you don't need to do that - it just needlessly increases item entity lifetime. batching the items can be achieved with a stonecutter as described in other comments which makes the items travel in stacks of like 4-6ish items with >8gt separation so the hopper cooldown has time to reset between each batch which solves the skipping issue!!
you're right about using sea pickles, chests or honey blocks to align the hitbox half over the hoppers though - the other block it's half over can be packed ice to increase the speed the items move at through the system and further reduce lifetime.
I'm convinced that whenever Joel takes a break between uploading videos it isn't because he's actually taking some well deserved time off it's because he's trying to figure out what he's gonna do for his next intro.

It happens because the items are too close together and hoppers have a small cooldown on catching items. An easy fix would just be to slow down the clock that drops the items into the water currents, so hoppers have more time to catch them. Hope that helped
I thought the items were draining into the system at hopper speed? Wouldn't that limit the dropper to that speed as well (not saying to disagree, just wanting to learn)

You can fix this by adding a stonecutter at the beginning at where the items are sorted with ice beneath to group a lot of the items together. The sorting isn’t working because hoppers have a cool down between picking stuff up. The easiest way to fix it will be to slow to clock emptying the shulkers. Otherwise, you need a stack separator in the water stream to group like items more.
It can be helpful to have your items drop and fall thru a cobweb or on to a trap door that opens and closes before they hit the water stream. It allows the individually dispensed items time to bunch together in stacks so the hoppers can pick them up all at once without hitting the hopper cool down.

Storage tech fan here, add an ice block with a slab on top of it close to the dropper this will batch the items and probably help fix some of the issues your having with hopper pick up. Also the redstone isn't terrible considering how unique the space is! I think you did pretty good utilizing what you had!
You should probably add a delay in the water stream to let items group up, your hoppers are probably overloaded with smaller stacks and additional ones are skipping.
11:22 What you can do is before the hoppers in the water stream, have a water source with 2 blocks after it a bottom slab, then stick packed ice under the slab and the 2 water things before it. What this will do is batch up the items into groups before they go over the slab so that the hopper cooldown doesn't affect them. Hope this helps!

easiest fix for the water stream is stonecutter batching imo - put a stonecutter in the water stream 2 blocks downstream from a source block and then another source block on the other side of it. the block under the stonecutter and on both sides of it should be ice. this will batch the items up to prevent the hoppers from missing them while on cooldown!! source: am storage techer

You don't want to put the water stream directly on the hoppers because the items will get caught in all the indents. You want to have the water and/or ice next to them and align the items to the edge of the block next to the hoppers with slabs over the hoppers. (I'm bad at explaining it, but it's in most items sorting tutorials)

speed is 100% not the issue here... you could also use ice and it would work if built correctly.

For your storage items you can make the water circle back around to where it starts to give the hoppers times to catch the items.
