It did not work for me!! I did the exact same ingredients when I started to heat the liquid dough it wasn’t turning like it did in the video 👎 it didn’t turn golden like she said it would

3 cups water
2 cups flour
1/2 cup semolina
1-2tbsp baking powder
2 tbsp sugar
blend for 2-3mins and set aside for 15-20mins
1 cup crushed walnuts
3 tbsp raisins (optional)
2 tbsp coconut flakes
2 tbsp sugar
1/2 tsp cinnamon
2 tsp orange blossom water
stuffing:
1 cup cheese (akawi/mozzarella)
1/2 tsp cinnamon

Yes, you can freeze before frying and it works very well. Leaving it few hours or days before frying is not recommended.

Soft semolina will still work. You might want to reduce water a bit.
