- The best moist fluffy strawberry 🍓 cake made from scratch no need for box mix cake and no jello
INGREDIENTS
CAKE
All purpose flour 250g
Sugar 160g
Eggs 3
Sunflower oil 100ml
Yogurt 150ml
Strawberry puree 174g
Baking powder 1 tbsp
Salt
Strawberry essence
Red food color
STRAWBERRY PUREE
Strawberries fresh of frozen 500g
Sugar 2 tbsp
Corn starch 2 tsp (TO MIX WITH HALF OF THE PUREE)
A bit of water (TO MIX WITH THE CORN STARCH)
FROSTING
125G Butter at room temp
190G Powder sugar
500g Mascarpone cheese at room temp
174g Strawberry puree (UPDATED)
Strawberry essence
Red food color

It’s amazing I love to use sunflower oil it has a neutral taste which allows other flavors to be more notable in baked goodies and it also allows cakes to be moist

Yes you would but it’s tiresome to whisk eggs to that volume without an electrical mixer

Yes it can, the yogurt helps for moisture. You can substitute it with milk

Will make this cake sugar free by using Monk fruit blend in granular and powdered. No sunflower oil as this oil is highly processed and causes inflammation in your body. Better to use avocado oil instead!
