Oh honey, I would have been in so much trouble by my mom for not folding over only enough fabric I needed for the pattern so that I would have a bigger piece of fabric scrap left over! She was a quilter and was always making aprons and other items for neighbors and friends. Sadly, she passed last year and although she wasn’t feeling well, she still managed to get one more apron made for her great grandchild. She used fabric from a dress she made for herself when in high school. Oh how I miss her!

As it's a knit fabric you don't need to worry so mush about the grain line or whether it would fray (as knits don't fray). Although you could line it up down the Centre of the leg if the pattern was very obvious, it'd get confusing with the line needed for the outer leg so I'd just follow Mimi's advice and use just the one line for the outer leg position till you get the hang of how to do it. You could serge it if you prefer to see a bound edge.

Use a pin to poke through the fabric where you have the seam, and it goes right through to the paper.
