  • Black beans and rice are easy to make in a Hawkins mini 1.5-liter pressure cooker. I used the canned beans and rice food storage I bought from the LDS Mormons back in 2014.
I soaked 1 cup of beans overnight and rinsed them in the morning. I added the beans to the cooker and covered them with just a finger of water. After the first whistle of the cooker, I turned down the heat so it no longer whistled and cooked for 30 minutes and turned off the heat after 30 minutes. I should have removed them from the stove at that point as they were a little too soft for my taste, but had a pleasant flavor.
I cooked the rice by rinsing one cup of rice and then added 2 cups of water some oil and salt. Once the cooker whistled I turned off the heat and let the cooker sit on the stove. When the pressure was gone the rice was done.
