How to Keep Prawns Fresh in the Freezer

  • In this video, I am sharing a simple way to keep prawns fresh. As prawns are delicate ingredients that can spoil easily, it is important to first store the prawns before the other ingredients. I will also share how they are defrosted to ensure maximum freshness. Utensils used ↓

    Indonesians and Filipinos share a lot in common especially storing seafoods inside an ice cream tub. I was always a victim of this ice cream prank by my mom. 😂

    I tried to put a little salt then steamed and put to a zip lock. I guess i can store it more days in a.freezer?

      Hi Yu Yu, You are welcome. I have not tried it with the lala so I am not able to advise. Usually the lala is best to buy and cook on the same day as it keep overnight it tends to loos its freshness. Thank you for the comment 😀

    Unusual method as I was told water is fresh produce worst enemy. So everything go straight into the freezer once I reach home.

      I’m from Southeast Alaska, we collect enough shrimp in the summer to last the family all winter. I take the heads off, place the amount (20ish) in a quart zip lock bag, fill with water and squeeze out any air but keep shrimp fully covered with water. It’s a fine balance. Then freeze. I have made some plywood forms which helps keep them square ish’ for stacking. I have about 20 bags in the freezer and those will still be good as new (fresh) in a year or more. The plastic tubs are a nice touch but bulky. Crab must me shucked and vac packed meat only no shells as it allows air to get to meat and spoils.

      @ninongmoto2023. I have not tried with mussels. Usually I have seen the mussels being freeze without putting water though. 😀

    Hi 👋🏻. I just seperate it into portions in plastic bags. Flatten n freeze. It defrosts within 15 to 20 minutes.

    Can prawns be frozen in sealed bag they were bought in? How long will they keep?

      Hi Marie Dempsey, thank you for the question 😄 Fresh prawns can be frozen in the packaging that they were bought in, however, if they are not submerged in water, the cool air will dry the prawns, deteriorating the freshness over time. If kept frozen but not submerged in water, I suggest to use the prawns within 2 weeks. Otherwise, if kept frozen with water, it can be kept up 4 weeks. Hope it helps 😄

      Hi Ang Hui Ling. I don't use this method for fish. Usually I just wrap the fish with plastic bag and freeze it directly without putting water. Thank you for the comment. 😀

    Can I remove the shell of prawns? Can I use the same method to store my shell less prawns for a long time?

      Hi Super Computer, thank you for the question 😀 For me, I don't advise to remove the prawn shells as the prawn meat tends to deteriorate within a few days of freezing. I've tried it recently and within 2-3 days, the meat started to loose its colour. Once the shells are removed from the prawns, they need to be used within next next few days. Hope it helps 😀

    not sure freezing in water is the way to go. take hours to melt and i always thought water is the source of bacteria and food poisoning in seafood

      @michellehavre6821. Thank you for the feedback. Yes, water prevents dryness and freezer burn in seafood, especially prawns. Mostly for commercial frozen seafood they always put water like dolly fish, squid, etc,.

      Hi Wanderlass, thank you for the comment 😀 It's because water takes a longer time to freeze room temperature water than chilled water, and before it's fully frozen, the prawn's freshness may deteriorate. So I added some ice to shorten the freezing time, and to help keep the prawns fresher as they are freezing. Hope it helps 😀

    When you de freeze the Prawns they shrink. You need to defreeze quick for restaurant cooking how to you de fteeze

      Hi Jawed Sharif, thank you for the question 😄 I don't have experience cooking for restaurants, so my methods may not apply. For me when cooking at home, I will allow the prawns to thaw/ de-freeze, at room temperature for approx. 1.5 hours. If I need it faster than that, I will soak the prawns in the water - however, I try to avoid soaking the prawns in water as this will cause the prawns' freshness to degrade faster. Hope this helps 😄
      Also, I have not observed prawns shrinking when they are thawed/ de-freeze. In my experience, I've only observed prawns shrinking when they are cooked 😄

      In the past I have thawed prawns in microwave. The king prawns have then shrunk.
