How to Make Microwave Steamed Corn / Stove Roasted / Elote / Mexican Street Corn / Corn on the cob. No Grill, No Oven!!
STEPS:
Cut the pedicel
Remove half the husks, leave some
Cut off the silks
Place in microwave and add 1/2 cup of water
Cover with mirocwave-safe cover
Cook for 20 minutes
Skewer the corn
Rotate the corn over stove's flame
To make Elote: [recipe for 1 corn cob] adjust according to how many corn cobs you are making.
Dice fresh cilantro
Grate parmesan cheese
Add 1/3 cup mayo to a bowl
Add 1/4 cup sour cream
Add 1/8 TSB smoked paprika
Add 1/8 TSP chili powder
Add a pinch of salt
Add a pinch of pepper
Add a few flakes of red pepper
Divide diced cilantro into two
Add half Cilantro to mixture
Mix thoroughly
Apply mixture to corn
Spread cheese on flat plate
Roll corn over the cheese
Sprinkle cilantro on corn
Sprinkle lime or lemon juice on corn
