    About one and a half years ago, I'd had enough of failed sourdough. I threw away my starter and gave up. Purely by chance, your UA-cam channel popped up and re-kindled my interest. I took some dried sourdough out of the freezer and brought it back to life. One and a half years later, I'm knocking out some cracking loaves. There are also the occasional failures, but who cares. That's what your instructional videos (a form of coaching) and enthusiasm for baking did for me, and I am genuinely grateful Phil. I think there are a lot of people out there who would benefit from joining such a community, me being one of them. My wife just nods and says "oh, ok" when I poke a lump of dough and tell her it's not risen enough yet.

    The lames I used for 10 years or so were stirring sticks liberated from McDonalds and fed through the slots in a razor blade. The sheath was made from Duct tape. A real feat of Engineering.

    Dollar Tree in the US has stainless steel bench scrapers. I ran mine through my knife sharpener. Works great, and can be thrown in the dishwasher.

    I bought a Danish whisk for mixing quickbread and soda bread. Lately I use it for yeast/sour dough too. Brings the flour and liquid mixture together faster and more evenly compared to my fingers/scraper.
    Cast iron pot is expensive in my country. I make shift with 2 pieces 4-inch aluminium trays.

    Thanks for the heads up concerning the scale.I bought a digital “nutrient scale” in a garden center that has proven very accurate and weighs in tenths of a gram, but it has only a 1000 gram capacity. I would love to find an old , professional quality mechanical balance scale. I doubt it would be as precise,but it would always work.
    I found an interesting slashing tool. It’s a folding scalpel. I don’t like double edged razor blades floating around the kitchen. This folds like a nice little titanium pocketknife. It takes pliers or forceps to change and install the number 24 blades. It can’t fall off. I found it for less than $20. Its nice to be able to fold that blade safely away when not in use. Truth be told, I was using a chopstick lame and the blade popped off. I haven’t found it yet and that really bugs me.

    I use one of IKEA's very cheap scales and the only complaint I have with it is that the screen (and button, the entire thing is the singular button) is a tad annoying to pull out and stow away as it is a disc shape and the button/display pulls in and out. That design is very resilient towards flower/water getting into the mechanism though. One piece of kit I think has to be included in a breadmakers kit is a big bowl with a tight fitting lid. Mine is also from Ikea and I absolutely love it. It just feels great to use. The lid has a rather pointless lid for peeking that I never use, but it seems to fit on snuggly so it does not bother me.

    Having been using tools all my life, using cheap equipment never pays off. I use the same criteria in my cooking life. Having bought the Challenger cast iron pan, bought the KD800 scale (my 3rd. one) there's only one conclusion you can come to. Going cheap doesn't pay off. Bought these items based on your testing of these pieces of equipment, the results were that you were spot on. Great job Phil. (Now I just need my oven to be fixed. Can you imagine. Eight days from Christmas with no oven!)

      Good grief. What I meant to say was that the KD800 was my 3rd attempt in trying to find a good scale, not that it was my 3rd KD800. Sorry about that Phil. My oven quit on me two weeks ago. Burnt out a wiring harness in the controls in the back of the oven. Supposed to be fixed this Wednesday. I'm going through withdrawal. Thoroughly convinced I' m addicted to bread making.

    Thank you, Philip. Great video as usual. I even found those super cool, thin, bread boards you use, which are actually disposable cheese boards. I love your mixing bowls too. Who made them?

      Nice David, little things like that make the baking experience more pleasurable. I made my boards out of cut-offs from the local DIY store. There are some cool budget solutions if you are happy to look around :)

    I also got the Danish whisk but prefer to use chopstick for initial mixing and pinching to smooth any lumps. Got a 2nd hand large oval cast iron Dutch oven CAD$20 that can fit both shapes, ordering a sling baking mat to load the dough. The sourdough community sounds good.

    Wow Philip, the professionalism of your presentation has jumped up significantly. Love the new set! If you get a lav mic to plug into the DJI you can tuck the transmitter out of sight for a more seamless look. Other than that, you could be on TV!

      Cheers mate, good to know I'm heading in the right direction. I tried to plug my Rode mic into one of the transmitters to pick up kitchen sounds. But the interference is huge. I've done a bit of research and it seems that there are only a few lav mics / mics that will plug in without lots of background noise. It's definitely the next step. Hope all is well with you buddy

    Oddly enough, I have a bunch of these - those baskets, that lame, that dough hook. In the US, the Lodge L8DD 5qt Double Dutch Oven (which I have) is under $50, so your US viewers can get that model and stay on your budget. Jim Challenger (of Challenger Bakeware) is a neighbor and I nearly got a pre-production model but I missed my chance.

    What I've been doing for awhile now is feeding what's left in my jar after making my dough & sticking it in the fridge. The night before I'm going to mix my dough, I get it out to set on the counter overnight. By morning, it's ready to use. Now then, what I've been wondering is what did they do before refrigeration?

    I had been using an enameled cast iron pot but the depth was a pain . Started looking all over and although not cheap what I settled on was a spun iron cloche (dome & pan) from Breadtopia. Twelve inchs in diameter and seven inches tall . Larger than width of Challenger ,half the weight with knob on top . (in combo with a pizza steel it works beautifully)

      Excellent product. But fairly large (12 inch diameter) so I can only use it to bake one loaf at a time.

      @@charlesbruggmann7909 I like it for not needing to bother with oven steam for single bake. (there is the option of 'two stage' for multiples. Cloche bake for ~ 20 minutes Then move first loaf to one side of oven , put second loaf in cloche and ~ 20 minutes later uncover the cloche loaf and take the browned one out to cool)

    I added a sharp edge to my bench scraper by sharpening it on a piece of 120 grit sandpaper on a flat surface. Hold the scraper at an angle and draw across the sandpaper. Or one could use a knife sharpener.

      @@CulinaryExploration I sharpen my chisels and plane irons this way going all the way to 2000 grit for a polished edge. BTW, I've been using an OXO digital scale for years, and they're great. The 5lb scale costs about $33 US.

      My round bannetons measure 22cm across the top and they are about 9cm high (outside measurements). I've got several of them and they are all slightly different sizes. But as long as it's close to this measurement you'll be good! Hope this helps :)

    I use these baskets however I find my dough sticks to the sides

      Hey John, your dough may be a touch wet but if you flour the dough well it shouldn't make too much difference. I've used plain old bread flour to dust the dough with great success but rice flour is even better at preventing sticking. Give it a go and see what you think, can't hurt to try.

      I find it’s when I take them out of the fridge the flour had gone damp and stuck to the basket
      Trial and error however still tastes good
