    Sometimes watching one Babish episode by itself can be a bit intimidating, more entertainment than inspiration, because you're so competent and there's so much to do to put a successful Thanksgiving together. But watching this marathon all together, the common threads between the episodes become clearer, and watching you do variations on the same theme over and over is weirdly confidence-boosting. It brings the huge and significant Thanksgiving Dinner down to, well, just food. Thanks for that; it means a lot.

    • @darlordvader
      @darlordvader Рік тому +4

      Also keep in mind that as competent as Babish is, as intimidating as some of his stuff can look, he makes mistakes just like we do 😅 if something comes out slightly wrong treat it as a learning experience and learn it for the next time. You can do it!

    Or just purée if you talk to anyone French...
    Just stick with the recipe from Joël Robuchon who wrote the book on mashed potatoes, and his recipe involves a whole lot less trouble...
    The trick is to use waxy, rather than starchy potatoes... You actually don't really want all that starch in your mash...
    That said, the excessive amounts of butter seem about right...
