Yesterday I cooked my very first thanksgiving dinner and I feel the need to thank babish for coaching me through a badass thanksgiving dinner that blew my whole family away
Sometimes watching one Babish episode by itself can be a bit intimidating, more entertainment than inspiration, because you're so competent and there's so much to do to put a successful Thanksgiving together. But watching this marathon all together, the common threads between the episodes become clearer, and watching you do variations on the same theme over and over is weirdly confidence-boosting. It brings the huge and significant Thanksgiving Dinner down to, well, just food. Thanks for that; it means a lot.
Also keep in mind that as competent as Babish is, as intimidating as some of his stuff can look, he makes mistakes just like we do 😅 if something comes out slightly wrong treat it as a learning experience and learn it for the next time. You can do it!
I do this every year as well. The pie crust from his pie video is the only one that has worked for me. Of course adapted to my area. We have a lot of humidity
@1:31 Andrew, there ain't no gluten in potatoes... over-mixing potatoes can bind up starches in the potatoes, but they aren't made of gluten which is a protein found in some grains.

Pardon me while I say things no one asked for It's all about what you're interested in and how it's being presented. A well-made UA-cam video explaining whatever the hypothetical lecture would have been about would probably hold your interest just as well as this, depending on the subject

I mean, there was an attempt to change the intro while using another part of the same song as a jingle. It lasted around two episodes because many people hated it. And probably hated change in general.

been doing the one side toasted bread trick since i accidentally put two slices of bread in one side of the toaster as a kid and discovered the superior textural experience.

The first time I made for him & our son who was about 2 or 3, my husband had 3 helpings and my son had 2. I slid it into our meal rotation and we've even taken it camping, packed in a gallon sized Ziploc bag.

Or just purée if you talk to anyone French... Just stick with the recipe from Joël Robuchon who wrote the book on mashed potatoes, and his recipe involves a whole lot less trouble... The trick is to use waxy, rather than starchy potatoes... You actually don't really want all that starch in your mash... That said, the excessive amounts of butter seem about right...
I watched that and it imidietly recalled a great memory about a stuffed chiken on my grandma's table... The difference is that in Poland we use to stuff poultry with kind of pate with green parsley
Since no one else has said it. It's suppose to be baking SODA not baking powder to improve the maillard reaction. The science is to adjust the PH and powder has an acidic component which doesn't help as much as if it were only soda.
Last year I decided to make Keto Stuffing, following your recipe for stuffing but replacing the bread with Inked Wolf Keto Seeds... it worked amazingly. But it also taught me that my oven is weird... it can go down to 130F. Considering I live about an hour from a place that can actually get that hot naturally, I found that amazing. And yes, I mean Death Valley.

That’s just a basic pie pastry. The secret is for EVERYTHING to be very very cold and to handle it as little as possible.

Sweet potato souffle/casserole is better with the pecan/struesel topping. More texture and flavor vs just overly sweet marshmallows.
