The reason they never build the dozer is because of the your side north east, there one command center is there, if you destroy it this would be a bad idea cause the dozer would start building in enemy base. Just make sure the main base of all command center destroyed before destroying the last one outside the enemy base. And I glad you did the correct path.

the stealth general becomes the completely normal general when you play against AI
Indeed. Your stealth just doesn't fully work against Leang, especially not with buildings.
not really, eventho the enemy knows where your stuff are, they cant really target them with units, because they are stealthed
