    Many thanks for posting this Eric! I'm not sure I would've ordered this month had I not seen it. Originally, I was going to order in Nov, but for whatever reason I held off. Then this special pops up in addition to the free flavor saver and chip screen he's tossing in this month too and I couldn't pull the trigger fast enough - for once procrastination paid off and a 4DW Digital Wi-Fi is on the way! I asked you quite a few questions in the past on these and the prototype, and I did with Steve as well, and was very please with the timely responses, so thanks again for steering me towards this brand and a BIG thanks for suggesting those upgrades to Steve and for him on actually taking action on them.

    I know I wax lyrical about Smokin' It and their products...Esp. as I am not an owner...but...when I was looking at importing a Smokin' It Smoker to the UK some years ago, they could not have been more helpful; Even after I decided that the cost of all the Shipping and import and tax duties etc. made the purchase of the (highly affordable) Smoker unaffordable they still showed an interest in my decision making. Kudos to Smokin' It and it's good to see a decent Company going great guns!!!

    Eric, I have a number two that I love. The only thing on the new ones I would wish they would do is put a exhaust system on them to be able to use inside. Here in Montana, when I make all my sausage its winter. Outside doesn't work with the cold and snowy days. Just a thought.

    Thanks for this review, I've been looking at finally upgrading from my 40" Masterbuilt (on my third one), these are actually less expensive then I expected, electric smokers seem to have price points at $3-400 and then $3-4,000 with nothing in between. Wont be able to take advantage of the current deals but should be able to pick one up next summer.

    Excellent video as always... Eric, you are my favorite UA-camr.... I'm not a chef or a butcher or a charcutier, but I still come to your channel because you're simply the best...
    Do they make a smoker-steamer combo???...
    This convection smoker is the closest thing I've seen, but I'm just a nerd not an expert.... I keep thinking that a moist-heat smoker would be a total revolution if it's technically possible... Brisket is usually wrapped and pastrami is usually steamed to finish their cook. Otherwise they would get dry before they get fully tender... A steaming smoker could possibly solve that....

    Nice review. Do you use this smoker indoors, if so will the smell go all over the house? Also what are your thoughts on pellet grills? Can't decide which one to get. I know the pellet grills can be modified for cold smoking, I've seen you videos where you do cold smoking and using a fish air pump, how does it work?. Thanks

    Hello Eric.
    What is the maintenance and cleaning schedule you use for your smokers? Does the convection air piping and fan require any additional cleaning or maintenance ?
    Can you provide any of your favorite cleaning products , tips and tricks to keeping a clean smoker?

      I try to do a clean a couple times a year, depending on how dirty it is. The piping should not require cleaning, but the fan blade might which is easy to get to. As far as a cleaner I typically use a high alkaline oven cleaner. It seems too curt the grease and gunk the best.

    Hi Eric. I have a #6 Wi-Fi the last version top of the line that I use mainly for cold smoking sausage. I have the cold smoker attachment and can honestly say that I have never been able to use it for longer periods. Meaning that when I fill it up fully for long periods of smoke time it creates so much moisture that pellets turn into mush from absorbing the condensation it produces. I’ve tried chips as well with similar results. Can you please share any thoughts or recommendations. I bought the largest model so I can hang large amounts of sausage and smoke for several days at a time. I have been using a cold smoker pellet tray on the inside and bought a much larger air pump for better burning and airflow. That works but would love to be able to fill the original cold smoke adapter for long periods. Thanks for your time and insight. Dave.

      Cheezheads, I have been cold smoking for about ten years. I have used a Smoke Daddy Cold Smoker for the last eight years. I have had some of the same issues using pellets and have better luck using wood chips. I have mixed pellets and chips in layers and found this works well. This lets the pellets dry out and be like sawdust and not mush. I still found that I had to tend the smoker every few hours; sometimes, it would make a void where the pellets or wood chips did not fall down and allow the fire to go out. I have not had this issue with the Bella on my new 3.5D smoker. Condensation is a product of combustion. Any moisture in the pellets or wood chips will be turned into steam or vapors as they burn, and the dry pellets will absorb this. High humidity outside will affect this even more. I found tending to the sold smoker every few hours has worked best for me.

      @@garthswisher thanks for your reply. I have ordered the new smoker vented cover and hopefully it works well. I hav also tried a mix of chips, chunks, pellets and like you must babysit the smoker. Not a great thing when cold smoking for several days. The last few years I have been putting one of the circular mesh pellet trays inside the smoker and have been using an air pump that puts out at least 10 times as much air as the little fish tank pump and that has been working quite well. I can get eight hours of smoke time this way without babysitting.

    Eric, I have been following you for some time, and you’re why I bought a Smokin-it smoker. I purchased the 3.5D smoker almost immediately after Steve got the updated Pro Series. It is very well-built and keeps the temp spot on. I don’t think I need to tell you everything I like about this smoker. It speaks for itself. The Bella Cold Smoker is great; my other smoker has a Smoke Daddy Cold Smoker. This might sound wild, but the Bella has a cleaner smoke. I don’t know if the smoke drawn from the top or bottom makes a difference.
    The only thing I could complain about is the fan will drip condensation, making a mess. I like the APP, but it loses connectivity with the smoker when I walk away. I hoped it would be like my INKBIRD APP on some of my other equipment.

      Is it dripping condensation from the outside or inside? I'm not having that issue with my #4
      When you put your sausage in there to cook, are you running the unit at 100f for 1.5 hours with the fan wide open and the door slightly open?

      ​@@2guysandacooler It drips from the fan housing on the outside. I have not made any sausage; Just smoked meat and some jerky. I cold-smoked some cheese and butter the other day, and the same thing happened. I smoked some chicken the other day, used the cold smoker for about 20 minutes, then turned on the fan to finish, and it still dripped. I just put a pan under it to catch any drips.

    Eric, I'm sure it does, but I can't tell from the Smokin-it website pictures; does the fold-out tray clear the Bellas cold smoke generator when the Bellas is installed and the tray is folded down?

I have been using my son-in-law's smoker, but he is a good distance away from me. I do believe he and my daughter will be sad as they usually get to test your sausage recipes with me.

    I'm looking at one of these smokers to put in my summer kitchen, Can these smokers be setup to use indoors? Curious how your setup is. It would be so convenient to smoke indoors year around.

      My set up is indoor but I have floor to ceiling screens on 3 sides of my room and a roof that also vents out the smoke. The wall that my smoker is in is also halt screen on top.

Are you a sausage maker, a butcher, a retailer who enjoys making sausages, a farmer, a pit master? I just can't figure out. You give so much information, I can't put my finger on it! I always enjoy your videos but I'd like to know your background!

    I've been watching your videos for years and love them and your advice. I've always heard that Cookshack has great smokers and have friends who rave about them. Price vs. price, function vs. function etc. which one is objectively better. I know that's a hard question for you to answer in an unbiased way because you are so closely wrapped up and intimately involved in the design and function of this smoker, but I would love to hear your comments and/or opinion!

      Hey Steve. That's a tough question. Primarily because I've never used a cookshack. At best I could just compare specs but that isn't always indicative of how they perform.

    What is the capacity for the wood box? How long will the smoker run making smoke?

      its pretty big but its not time release. so all the wood put on the box will start to smoke around the same time. inuse the fold smoke generator almost evertime as i can get 10 hours of steady smoke with that unit

    Are these smokers as-in smoking briskets, ribs, etc,? Or intended for sausages and the smaller meats, fish, etc?

      All of the above. We do brisket and pulled pork in ours all the time. It cooks sausages great. You can cold smoke if you want. It's a true smoker.

    Eric. I have a smokin it smoker. PID controller. The app is terrible. My casters don’t turn very well. The plastic controller has plastic threads so the external thermometers strip out.

      I'd be interested to know what version of the app you have. Is your icon black or red? Also, have you looked into why your casters don't turn? Mine turn beautifully. I know that if the washer and lock nut are not installed correctly, they will not turn smoothly. As far as the plastic threads on the temp probe, you are correct. If you are rough with them, they will eventually strip. My original Smokin-It smoker is super old and i can say that my temp probes are just like new. No problems with the threading. With that being said, it would be cool to see a metal connection there.....

      @@vikingdrool2252 i dont but i have heard that if you damage your internal temp probe it could cause moisturr to get into the controller. Have you checked the temp probe to make sure its on tight with no issues

    Please make some additional videos on how to use these smokers. There are almost none on UA-cam, unlike other smokers that have many. It's unfortunate that a unit that costs so much, has so little information on it on the web, outside of the manufacturers site. Here you promised to make a video on how to use the controls. Is that still planned?

    The convection fan is really nice . It sounds to me that you could also use this as a dehydrator or a biltong box . Is there a function to monitor humidity ?

    I’m not sure I like all those shelves hanging from two pins on each side. Sire the pins may survive beyond the side hanging shelf guides may suffer. Still saving for one and can’t wait.

    Be careful with the warranty they have, I have had a issue with moisture getting into the pid unit since we have had it and after replacing the probe and the pid unit and drying out the the insulation and have Steve telling me to use plumbers puppy to try and seal up the probe (not what you really want to do when you spend this kinda money) and still having the issue of moisture getting into the pid control I asked Steve about the warranty to get one that works correctly and won’t have issues down the road and was told to send it back on my DIMe and he would refund my money for the unit. And yes I have all texts to confirm what I am posting

      I typical wouldn't get involved in a situation like this but I've never heard of a situation where Steve didn't honor his warranty. I'll tell you a quick story as to how I even ended up with a Smokin-It smoker. I live in Latin America and many years ago 7+ an expat came down here and wanted to open a smoked meats and BBQ restaurant. He brought with him 4 smokers from Smokin it (they were all new). The man shortly died, and his wife was charged with the task of trying to figure out what to do with all his stuff. Since I knew them, she had asked me if I wanted to but a brand new #4 that her husband had (still in its original packaging). I had never heard of the brand, but I wanted a smoker, so I said yes. I loved it and it opened a new door in my small business. After having it for a year or so I had an issue with the relay. It had burned out on me on a weekend that I needed my smoker. I called the number on Smokin-It's web site and a guy named Steve answered.
      I explained what had happened and emailed him photos. Steve (who didn't know me) not only explained how I could get my smoker to work for my weekend cook, but he also sent out a new relay, some wires, and some connections, absolutely free. I was blown away!! He didn't have to do any of that as I didn't even buy my smoker from him, but Steve's level of customer service far exceeds that of most companies in business. In that instance I was a loyal customer and have been ever since. Matter of fact I am asked at least once a month to try out a new smoker from XYZ company and I always turn them down because I am loyal to the Smokin It brand.
      So, with that, I had to call Smokin It to see why you were having so many issues. I was told that when you originally called about your problem it was determined that the cause of the problem was a broken probe (more than likely caused by placing a piece of meat/ham into the top level of the smoker and hitting the probe. This would have caused moisture to seep into the back panel of your smoker and once it got saturated the evaporation would have caused it to seep into the controller. I asked Steve what he did about it. He told me that he sent you a couple free temperature probes and a Jerky Dryer at no charge. I believe he even said he sent it overnight. In my opinion this response is a little more in line with the level of Customer Service that Smokin-It provides. The issue wasn't a warranty issue, but Steve still went out of his way to go above and beyond to help a customer in need. The fact that he sent you a Jerky Dryer for free and even went so far as to say to could still return the product for a full refund blows my mind (even though it has clearly been used for a little while and damaged). Returning it on your dime would just make sense in my opinion.
      I did ask him how you can keep the issue from happening again and he explained that the fiberglass is saturated with moisture and fiberglass takes a very long time to dry out. One way to help it dry out is to unscrew the controller and expose the home that is in the top of the smoker. When you run your smoker the moisture from the fiberglass will evaporate into the air, rather than into the controller. Once the fiberglass is completely dry you can screw the controller to the top of the unit. Sounds easy enough to me.

      @@2guysandacooler I understand and I am not in any way asking you to get involved, I am just letting people know what my experience has been, as with anything there are two sides, but I do see he has failed to mention that from day one of receiving the smoker there was problems with a broken rack and a missing retainer screw for the exhaust, and after getting the wrong part sent with no retainer screw, I was already a little frustrated, then for him to assume that we broke the probe when it’s protected and we don’t hang anything that even come close to it and it’s made of plastic, which I even told him it seemed broken by over tightening the screw in assembly,he has sent a replacement probe but only one and a lot of pid covers, because at first his response was to keep replaceing the covers as moisture got in it, I think by sending the jerky dryer he was just trying to put a band-aid on a bigger issue. And yes I have all his texts from day one with his responses.

    Oh, let's be honest. The app could be better. Yes, it does the job, but using it is a struggle and a fight through lousy design decisions. It needs tons of improvements...

      I've had my 5D gen 2 wifi for almot 2 1/2 years with no app issues, I almost exclusively smoke sausages and program 4 or 5 steps.

    Yeah their grills and smokers are way out of reach in price for the typical residential DiY'r! $1800 for the cheapest smoker + electronic device + wood chips or pellets + power + meat! I don't think I've consummed $3k in smoked meats in the last 40 yrs.

      LOL. The only time I'll block someone is if they are trolling the channel or being hateful. My MODS on the other hand are a little less forgiving. They tend to block comments if someone is unnecessarily argumentative, if someone has an agenda that they are trying to push in my comment section, etc....
      Once a person has been blocked then all of their comments are blocked (that's how UA-cam works), so my guess is that somewhere along the way you must have left a comment that my MODS thought was uncalled for.
      Then there's You Tube which will place comments in Spam for whatever reason. Sometimes it doesn't even make sense.
      To answer your question, yes, sort of. Part of the Smokin-It smoker line is manufactured in China and part is manufactured in the US. Are you interested in buying a new smoker or are you just trying to let everyone know where they are built?
