      I just got the Wrangler in September… love it… had a outdoor gourmet that I bought at Academy 3.5 years ago for $200 to get started in Offset smoking

      @@FattysFeasts The biggest thing is maintaining a steady temperature with the heavier steel… plus I don’t get overpowering smoke flavor.. good clean smoke and tender juicy finished meat

      Just ordered the Brazos and it's set to be delivered in the next few days, super pumped to step my BBQ game up.
      I currently own a Char Griller Smokin Champ. I've had it for 4 years and it's been great but the Brazos has been on my mind for almost a year

    Great Review. I own a corrosion prevention company and have applied that learn base to my pits. First you can apply a product called. POR15 to the outside of your pit (1200deg rated) for about 65.00 a qrt. this will last the life of the pit for rusting. I apply this when i buy the pit and it has worked perfect. I live in South Louisiana and the humidity will kill a pit even if its covered. Do no use this on the inside (LOL) had to say it. For the problem with the Brazos deflection plate... I drill about 20, 5/8 inch holes in the plate and it has evened out my burns. You can use the toast test see the hot spots. (place toast all over your grill great and light the pit and see witch ones get burned first. Hhappy Q's

      That's an awesome tip! I'm gonna have to try that when I get my new rig, as it will probably be outside most of the time. I found ripping the plate out was easier than drilling. It was just 4 crappy welds holding it in place. But if you want some heat deflection still, that would work well.

    My buddy just got a Brazos last week. We did the seasoning and initial cook over the weekend. Kicked off with ribs and a pork butt... wow does this smoker run well! Enjoyed watching your vids on both seasoning as well as mods. We pulled the deflector plate off immediately, as well as lengthening the stack before even lighting the first fire. Got the hot spot VERY close to the firebox and very consistent temps throughout the cooking surface. Also achieved a downward heat direction so fat side up for cooks!

      I usually don't recommend making mods prior to the first cook, however, I think what you did here is a MUST with this smoker. It makes it run so much better! Glad you pumped out some great BBQ!

    Thanks for doing this video Josh. I have an electric smoker, a pit boss pellet smoker, a Weber kettle and blackstone griddle. Love my Weber but I need more room. Not real impressed with pellet smoker because I hate the heat source being dead center of barrel. Sold it tonight. Buying a Brazos DLX. Luckily I have an Academy Sports somewhat local so I can go pick it up. I never use the electric anymore but it was a good starting point for me about 10 years ago. Your video just solidified my decision. I was also considering a Yoder smoker but they are $$$ (comparatively) and over a year out on orders. Sorry for the log post (Dear Facebook..lol) but I just wanted to say thanks for doing the video…it was what I was looking for. Happy smoking!

    Excellent video! Love my Brazos smoker. Protect the table by wrapping it with a sheet of heavy duty aluminum foil before every cook. To refurbish it, use a scouring pad to clean it with hot soapy water, rinse well, dry and spray with a can of high-temp paint. For even better results, wire brush or sand the surface after de-greasing then follow the cleaning steps above before painting.

    I just bought the Brazos DLX, however I have not used it yet and it’s still on my truck. I can’t wait to ask my friends for help lifting a 500 lb grill but I think I have it figured out where there is little lifting. I really liked your review. I have cooked on this type of grill for 55 years now so I had already did my research and there is no way I would spend 5 grand on some pro model. Thanks again, Rick…

    Love my Wrangler!!! Shorter than Pecos but Thicker Steel 😊👍👍 Perfect for small family. Done 20# Packer Brisket had about 1.5-2” each end. Came out Great!

      I also have a wrangler. Do you have problems with a hotspot in the center burning the bottom of your briskets?

      @@felipemata2960 remove the tuning plate and increase your stack height, the hot spot will then change right by the firebox opening but not the middle where you cook

    I love my Brazos. The wrangler is actually a step down from the Brazos. Its shorter and has quarter inch steel on the cook chamber but not the fire box and it sits up higher. You made the best choice for the money....

    Use the cooking grate in the fire box to reverse sear tomahawk steaks. Smoke the stakes in your main cooking chamber at 225 until internal temp reaches 115 (for medium rare) then sear them on the rack in the fire box right over the fire! Amazing

    I have an Oklahoma Joe’s longhorn 3 way combo and I’ve had it for 3 years but I definitely want to upgrade to a larger smoker. The Oklahoma is nice but with smoke chamber being so small it definitely makes it much more difficult to do a cook. I just recently heard about the old country brazos from Mad scientist bbq so I’ve been watching a ton of videos on it and do a ton of research and I’m pretty sold on this one. I was going to go with another Oklahoma joes but after seeing this one and the price while not cheap I feel like this is best bang for your buck. Thanks for in depth review!

      I almost went with the OJ to start out. But same with you, I saw Jeremy's video and settled with this. Don't regret it at all. Once you take that stupid baffle plate out in the smoke chamber, you will love the thing!

    Nice review. I have the wrangler. I always sweep the ash out of the firebox because it holds moisture and will cause rust. Your 100% right these are for the person who wants to sit by the smoker and have football or whatever playing in the background. You have to enjoy the smoking day and managing the fire. I have many friends that just want convenience and that is important to know. Those are pellet folks.

      Same here! I have many friends that use pellet smokers. It makes me feel good when they tell me the smoke flavor on my meat is no comparison to theirs. They will come over anytime and drink some beers while I do the work, they just don't want to deal with it themselves!

    For the grease port - you have a threaded pipe so you can attack a ball valve and then you can shut it and open it freely.

    I also got a Brazos, back in April 2020. I agree with all your points, pro and con. There is one other consideration for any offset. They go through wood at a surprising rate. Sometimes l feel like the cost of the wood is more than the cost of the meat. Make sure you have a reliable wood source.

      Good point. That can get expensive, especially when buying the small packs from stores. I believe you're always better off buying from a tree removal company or posting on facebook forums looking for free stuff, as long as you can afford some time to let it dry.

      Do you test your wood for moisture consistency? Just curious that if wasn't right the food might not taste as good as it could.

    Thanks for the great review. I have an over/under style offset. Old Country also makes one. First, it saves space. Second, since the firebox is the full width of the smoke chamber, there’s a lot of room for direct grilling, and I can use full length splits, basically anything that will fit into a fireplace. Third, it practically eliminates hot spots in the smoke chamber.

    You can grind off that baffle plate in the cooking chamber and replace it with 2 hinges to fit a water pan onto. Changes the game completely.

      Oh hell yes. I actually removed that stupid thing a few months after making this video. In some other videos I made, I mentioned how useless the plate is. I get why they did it, but it creates more frustration and ruins more food than it helps, especially for beginners.

    I’m definitely considering upgrading to one of those. Even with the two Oaklahoma Joe’s I have, been told I need to sell my bbq. I also try to be the best or at least get better. I tell new comers to bbq is that you will never get better by watching a video.

    This smoker is worth its weight in gold. I have one that I did major mods to. To build one like this right now would cost you well over 1500 just in material with steel prices so high. Buy them now before they go up. Great video review also

    As a third party delivery driver you should be thankful it was early....even by mistake
    Or your bbq pit could've been, probably would've been accidentally bumped around, tipped over or non strapped by 2pm ! Lol
    They didn't want that thing bouncing all day you shouldn't either

      I am without a doubt thankful that my only damage was the latch, especially considering what other people have mentioned after seeing this video! As I said, I worked in shipping too for a short time. That was enough to see what people's stuff goes through. I can't begin to tell you how many things we broke or found broken.

    I own the Old Country Pecos that you spoke of. I put bbq gasket around the door to eliminate the leaks and drilled seven 1 1/8" holes with a hole saw in the baffle plate to allow better heat and air flow into the cooking chamber to move the hot spot close to the firebox instead of in the center of the cooking grate. It worked great. I use my smoker all the time. It's a great smoker and puts out great food. I love it.

      @FattysFeasts I drilled holes in it. 4 close to the bottom and 3 closer to the top. 1 1/8" holes with a hole saw. That allows great flow over and under the meat and it really evened out the cook chamber. It really cooks great now. The first cook in it, it over cooked the bottom of the brisket like you described. After I drilled the holes in the baffle plate, it cooks great now. And the fire is much easier to control since it also dramatically improved the airflow from the fire box through the cook chamber. I didn't even have to extend the smoke stack.

    It's great to see another New England bbq'r. Im currently running a Wrangler. I don't know how old it is, I picked it up used on Craigslist for $100 a couple years ago. It had surface rust which I knocked off with an angle grinder. I used a thin coat of lard to develop a patina.
    Regarding the Wrangler vs Pecos. The Wrangler has thicker steel on the body and doors. It also has a second shelf.
    I've added a few accessories. The best was a tuning plate system from bbq smoker mods. I added a cheap wood charcoal basket from Amazon and some firebricks in the firebox.

      How are the fire bricks working out? I too have a Wrangler and it is a step UP from Pecos due to the thickness albeit shorter- Perfect for small family

      @@2005Pilot I'm able to get a small hot fire in the firebox. I assume the firebricks help. Adding more mass to the firebox can't hurt and firebricks are affordable.

      @@FattysFeasts Have you tried taking the upper firebox grate and using it with coal basket and moving the original grate as tuning plate? Done this on my Wrangler and haven’t looked back! No charred meats, consistent temps, better coalbed w/o over heating

    I bought this smoke and it's fantastic. My only gripe is that every time I plan a BBQ it rains. I have yet to use this smoker in dry weather. Hasn't rained in weeks. I buy a chunk of meat and boom, rain.

      I love it! Literally that’s how it is with me also. I’m actually smoking a brisket right now and it’s been perfect weather all day. First time in a long time I’ve had nothing go wrong weather wise.

    The Wrangler is 3/16 metal. The cooking chamber on the Wrangler has two levels, but it's not as big as the Pecos or the Brazos. The Brazos is 1/4 inch metal and has two level cooking ability. Basically, the Pecos is the same size as the Brazos, but the metal is not as thick, and the Wrangler is a little smaller, but has thicker metal than the Pecos, but not quiet as thick as the Brazos. Pretty damn confusing, lol, but this is the info I've gathered. I have the Wrangler and like it and use it weekly and sometimes daily. BBQ is hard folks... Practice, Practice, Practice. Heat, Meat, and Smoke (Clean Smoke).

    Josh thanks for your candid review on this Old Country Brazos Smoker. Learning the pros and cons was very educational for me. This particular brand and model of smoker is one that I've been highly considering and it appears by what you said you definitely would get more bang for the buck with this particular one. BTW I currently own a cheap ass BBQ Galore Offset smoker that I've had for the last 5-6 years. Knowing it never was perfect I made modifications to help make it more efficient. I'm now ready to graduate to a big boy smoker and your video just sold me on which one to purchase! Thanks again man!

    Love the video! I've narrowed it down to this smoker. However also living in the northeast I'm skeptical on the shipping. I've heard some really bad stories. I'm surprised that no stores carry this brand on the east coast. Guess I'm rolling the dice with shipping. Look forward to more of the videos.

    I have an Over-Under from Old Country which is very versatile but the steel thickness is the same as the Pecos. After smoking off and on for many years I realize that the thickness of the steel makes a huge difference.

    The reason the wrangler is smaller but more expensive is because it’s made with heavier gauge steel
    The BRAZOS DLX is more expensive because it has the counterweight, heavy duty charcoal grate, tuning plates, and a drain valve

    Great video. I too did exhaustive research on affordable smokers before I upgraded. I completely agree with you that the Old Country Brazos is the best smoker right now for the money. FYI - In addition to Academy, most of the Buc-ees Travel Stores in Texas and probably the other states as well carry the Old Country Smokers now.

      @@BimmerFordDude Yep, I just checked Academy is sold out of the Brazos right now and is only carrying the Brazos DLX, which is limited stick also
      It's $1,299 and if you can save for awhile more, worth it in my book. Check it out, you get a tunning plate, and a custom counter weighted lid like you see on the $4-5,000 dollar pits out there. I hope you are able to find one and get set up for the summer brother. You will love it.

    I have a Pecos, it works well enough for the cost. The unit you have is the upgraded version of the Pecos,it's a better smoker. Thing is the additional cost. There's a old saying " when crossing a creek, if you get one foot wet, you might as well get the other foot wet also." What that means here is at a $1,000 or more just go ahead and get a Yoder or better yet, get a Lonstargrillz smoker. And speaking as someone who does have a Pecos for approximately $500 do yourself a favor and get the 22" Webber Smokey Mountain smoker. Much easier to use and maintain temperature. Once you get it figured out you can actually walk away for a few hours, especially if you use a fire control unit. And unless you can pickup the oldcountry products at Academy don't consider having it shipped to you. Wow was that a bad experience. Anyway everyone have a great day 🌤.

    You can buy and put on a closable valve on the grease drain. you can then use the smoker as a water cooker by placing water in the cook chamber.

    I cut the heat deflector out of mine and put a smoke collector on with a longer stack, burns pretty even side to side. I have the dlx cuz the brazos they shipped was damaged so they replaced with dlx. Only difference is weighted door and a baffle plate

      Damn lucky you. Wish they had the dlx when I got mine 😂 of course mine was still useable. Now the price difference isn’t that bad so I wouldn’t be surprised if people just start buying the dlx

      @@FattysFeasts I never saw my brazos,shipper returned it, then they weren’t available for shipping so I talked them into dlx for same price, that arrived damaged but useable so they gave me another couple hundred off of that!

    Buy a 1.25” ball valve for the grease drain at Home Depot!!! It was like $30 but worth every penny

    Another factor is longevity. A pellet smoker has electronics that can and will fail. There is nothing to fail on the quality offsets that cannot be welded back. Simple and cheap to repair if needed. That smoker will last a lifetime!!!

      If you don’t keep it oiled on the outside it will rust and fail.

    If you get a thermometer with the correct probe length it will sample the temperature in between the upper and lower rack.

      I have had a OKJ Longhorn for about 8 yrs.Ive become pretty proficient with it but I hear the thicker steel on the Brazos is quite the difference maker.She's in excellent condition, a drop of rain has never touched it and has several mods.The plan is to sell and get the Brazos.Your great video convinced me.

      @@DRagland1307 I'm not gonna lie, I talk some trash about OJ, only because some of the products they release are so gimmicky and I don't understand their thinking. But they do have some decent offsets. I have always wanted to try the gravity fed. It seems to produce pretty good results with less effort.

    you gotta season that shelf and smokestack like the rest of your rig. Obviously, temps don't reach that high for polimization to happen so you need to coat your metal with a good food-safe oil for seasoning then take a blow torch to it. Couple rounds of this seasoning will do you for the initial seasoning. Then it's a matter of storage and upkeep. DO: use a cover even if your rig is under a roof, wind carries water far. DO: once a season (spring, summer, fall, winter) do another round of cleaning the rig, reoiling, and reasoning - blow torch where nessescery. High temp paints can really help with the shelf for sure as well.

    Can you drill holes (2 or 3 holes, 1/4"-ish thick) in the heat deflector to help with heat dispersion, or is the metal too thick?

    I've been looking at the Brazos DLX. The price seems great for what you get but there are two things holding me back. I have heard from about 90% of those who bought an Old Country smoker say that there is always something(s) on them bent, broken in shipping, or simply missing. From the door latch, dampers, handles, etc. and some cannot be fixed without a welder. Second is that the hardware and latch materials are cheap and flimsy compared to the rest of the smoker build. That fire box door and latch you showed on yours (which got bent) is unacceptably thin and flimsy. I know they are trying to keep costs in check but attention to "small" details matters. I have pretty much decided to stay with what I have until I can afford a custom-built unit because how much could beefing up those parts cost them as well as crated shipping?

      I definitely understand where you're coming from. Now, I believe every shipment is crated and the brazos comes on wheels. The last smoker I got from them (the G2) had no damage in shipment like this one did, as it was crated.

    The pecos is a step down from the brazos in the steel is half the thickness but same overall size, the wrangler is the same thick steel as the brazos but has a much smaller cook chamber.

    Insider putting in a chimney extension. 14” additional will increase air flow and serve to balance temps better.

      Any height increase at all will increase your airflow. So it doesn’t mean you have to go up 6 feet tall

    My add on buying a stick burner smoker, thickness matters. Only buy 1/4" steel, if that is not in the budget just buy a Pecos or Oaklahoma Joes for $500. Also, buy used to save even more.

      Absolutely. I am currently working on a video as more of a buying guide for offsets and said the exact same thing. I would still be hesitant for 1/8” in colder climates, but then again I’ve never tried it.

    For the grease drain, just get a quarter turn ball valve. That drain is threaded so all you have to do is thread it on and boom, you can open and close the drain.

    Thanks for the detailed video! I have Kamado Joe that I love but want something that I can fit a little more meat on and have always wanted to add a stick burner to the collection. How many Boston butts do you think I could fit on the Brazos or how much have you cooked on it at once? Thanks for your help

      Glad you enjoyed it! I could imagine you could fit quite a few. Comfortably, I would say 6, but if you wanted to push it, you could probably do 10. I've cooked a brisket, 2 racks of ribs and some sausages on it at once. I usually don't cook too much at once, only because I don't need that much food lol, but if you wanted to cook for a group of people for a backyard party, you could easily do it. Compared to the Kamado Joe, you'll have a ton more real estate!

    I know I’m late, but… did you take a flathead screwdriver to bend that latch catch out so it would lock? Also, your threaded grease drain pipe is threaded to add a ball valve on so you can shut it and grease won’t continue to drip.. I’m sure you have, just wondering

    Rule number one of buying the Brazos smoker: DO NOT SHIP. These things weight like 600 lbs so they are prone to transport damage. They can be damaged on the way from factory to the store/warehouse and from the store/warehouse to your home. You want to go to a store that has a bunch of them, you want to inspect all the welds, all the doors, you want to see if they close tight and you pick the one thats in best condition - every one will likely have some ding.

    I use lump charcoal in my Kamado Joe and don't have the issues you're having with standard briquettes. Give lump a try.

    This is the smoker I want but now it’s $1200 for the Brazos and I’ve been trying for weeks to get one but Academy won’t ship this smoker anymore for some reason! Not to mention shipping costs are now $300 for other smokers from Academy!

    I have a stickburner like yours you need too spray everything on your old country including the front table on a regular basis.most people only oil up the internal metal , i use canola oil inside and out.and you need a charcoal /wood crate box for your firebox.

      Glad you enjoyed it! If I recall correctly, it was about 20 during my coldest smoke. I'd say now though that the problem wasn't the cold, but more so the wind. The weather was just terrible that day and my fire was a pain to maintain.

    POR15 for the shelf. scotchbrie it and paint it on with a cheap foam brush. It's thick and heavy and will self level leaving No brush strokes

      It's a 12" wide and about 14" deep and has holes on one side of it. The ones that old country sells separate are 14x3 I believe and comes with 7

      The DLX also includes the ash clean out tool, and since around 2023, they have swivel caster wheels on the stack side so you don't have to lift to move it around.

    Do the fire bricks really help? And if so what about placement and how to attach them? Thanks great vid . Thinking about selling my BBQ wanted to upgrade my smoker

      I think they have helped in the colder months. During the summer, probably not. I just like them because it evens temps a little bit and if you screw the fire up (which I have by falling asleep), they buy you more time to get it right again. I literally just lay them in two rows, 3 on each side from the stack back to the firebox right next to each other. They stay put. I also keep a few inch space in the middle of the smoke chamber for the grease to flow down. Yeah, they have gotten dirty, but I honestly don't care lol. Hope that helps!

      I have, however, I find this weird technique works better. Only because the heat is concentrated in one spot which makes an easier to maintain fire. I know it sounds odd, but I love it.

    Nice good value smoker, but can't get over the welds shown in the front of the smoking chamber. Others are welded inside the chamber giving the chamber/lid cleaner look. Second, the smoking leakage around the lid, every video shown, they have to add smoking tape around. Yea, I'm picky, but spending over a thousand I myself can't afford to have these 2 issues. Again, not to be critical, just want to let other people who are in the market to buy, what to expect. Still outside these issues, again a great value.

      I understand what you're saying. I agree 100% with the leakage, but I will say, I have seen smokers that cost $4000 plus that leak also, which is just unnaceptable. This leaks just as much, if not less than those, which is insane. With the welds...yeah, BUT something welded on the inside would cost much more also.

    Hey @Fatty's Feasts & Funnies! I'm curious if you ever wish you think it's better to buy the Brazos with thicker steel and top shelf already in instead of the Pecos? Do you the Brazos is worth 2x more than the Pecos as far as performance and value? I'm torn between Pecos to save money or Brazos for the possibility of better performance and long term value over time. Here in CA its $850 for the Pecos and $1600 for the Brazos when I factor in tax and gas to pick it up 3hrs from me, so it's a big investment but I dont want to drop $3k+ on a custom since I'm new to stick burners. I read with stack extension and baffle removal that theese things perform as good as any custom. Would love your thoughts, thanks!

      I also had that debate. I just went with the thicker option because of our weather in CT. It really sucks that the prices have gone up. They are still an excellent value, but I just can't imagine it will drop anytime soon. I have never used the pecos, but from the videos I've seen on here, people really seem to like them. My video coming out later today actually shows me taking out the plate completely and adding an extension. I haven't had the chance to cook with these modifications, but I'm sure it will perform much better. Once I do a video cooking with the mods, I will put a link in the video coming out today. Not sure if that answers your question, but I guess I would say if you can do it, just spend up.

    I have several grills and smokers from a 250 gallon offset to a kettle and Kamado Joe.
    The first smoker I ever bought though was a vertical Old Country BBQ pit.ive had it for 4 year a now and I still use it over some of my other stuff. It's very versatile, has hangers for sausage and bacon and a big giant water pan in the bottom. Aside from my 250 it's definitely my favorite.

      @@FattysFeasts only downfall I've seen is if you don't empty the water tray/ grease catcher after a full load of briskets, it's more prone to a grease fire. But that should go without being said. The $700 old country pit is my favorite and probably the best bang for your buck of all their stuff.

    I just bought the brazos dlx, upgrade from pecos. Two cooks pork butt and brisket. Still trying to figure the temps. It came with a tuning plate which I would love to know how it factors in. Bought at Bucees in Ft. worth. The main grate was warped . Bowed up in the middle so have to lift up center to slide out which is not easy with meat on it. Biggest challenge is the hot spots thus far.

      I tried doing a makeshift tuning plate in mine and I felt like it made it worse. I honestly think the best way to go is just take all the mods out and get the hot spot as close to the firebox as possible. If I did it sooner I would have saved myself a ton of frustration!

    Wrangler is more than the pecos becuse its made with the 1/4 inch steel like the brazos. The pecos is like 1/8th inch

      Absolutely. The only downside is you lose cooking space with the wrangler, whereas the pecos is the same size with thinner steel.

      I'm not good with weight estimates, but if I can recall correctly, I can fit about 12 splits worth of wood under there. I take my 16in pieces and can split them into around 8-10 splits. It's usually just more than enough for a long brisket cook. Also, yes I have used the cooking chamber for grilling. Does it get as hot as your typical grill? No unless you really cook the hell out of the firebox. But, it does allow you to get some good smoke flavor on your burgers and what not. I checked your video on using the cooking chamber for grill, but I was thinking about putting charcoal on the cooking chamber and grill with direct heat, more like a typical grill, maybe using a metal sheet to rise the coals closer to the grill. I don't know if this is possible on the offset.

      @@__-ul7cc I mean, I personally have never had a desire to try it, just because the air flow up the stack may be a bit weird and the heat would go to one side. I also don't know how heat would react and if it would travel from the cooking chamber into the firebox, so that may make cooking kind of a pain as well. I have however used my firebox as a grill and it worked pretty well. I used that grate that comes with the smoker. However, it's a bit tough to do if you're trying to maintain temps in the cooking chamber plus trying to grill. Hope that helps a bit.

      Maintains it pretty well, even in the blistering cold. The biggest issue I've noticed is wind. Maybe it's where I have it positioned in my backyard, but the absolute worst time I had smoking was when it was windy.

      If I remember correctly, it was about a week and a half. That's why when they told me they could swap it out, I was like "absolutely not" lol! Didn't want to wait 3 more weeks to get a new smoker.

    Baffle plate is wrong should be removed
    Stack is short should be 75% length of the cooking grate.

    The Wrangler has thicker metal than the pecos but not as thick as the Brazos

      Started out smoking bluefish on a Brinkman bullet years ago. Had done charcoal, gas, and electric. Finally going old school. Will be looking for a wood source for this awesome stick burner.

    Only way too cook is on a stickburner,real BBQ ,straight up ,i have done them all ,its the most delicous best tasting meat overall and I’m a old fart young man.

      The cook chamber is 40", but your actual grate length is 33".
