It depends on which one you click on first, like with sheep if you have a black and black white sheep, and you click on the black one with wheat first and then the white one, you will get a black sheep and visa versa.
I'm almost positive I used to be able to make Endermen mad by staring at them through glass. I had a house I built on water, and I'd travel far away on boat, and then I'd zoom in and stare at the Enderman squatting at home through the windows, and they would actually react and try charging at me. This was way back in 2016 so older version.

The reason the villagers can sleep on the beds while half their body is inside lava or other block, is due to their hitboxes being tiny when they sleep, so the hitbox does not touch the lava. If you push the villager a bit, it should interfere with the lava and burn.
