Hello Michael, I’ve been enjoying your reviews of Bertha, your Beyond Class B which lead me to your banana bread video. My family loves banana bread. Your recipes look great but, we are staying away from refined sugar, fats and white flour. Several years ago, a friend shared this WW banana bread recipe with me and I would like to share it with you. It tastes delicious but, it will not rise as a bread with wheat flour and baking soda or powder because there is no gluten. It will resemble a bread pudding, dense but when cool, can be sliced into squares. I pour it into an 8”x8” baking dish that has been greased with coconut oil or nonstick spray oil. 1/4 of the recipe is one serving for breakfast or a snack. Vana Nana’s WW Banana Blueberry Bread 3 ripe bananas (medium or about 7” long) -peeled and mashed 1/2 cup applesauce, no sugar added 1/4 cup milk - I used almond milk 1 teaspoon pure vanilla extract 1 cup blueberries- fresh or frozen (not necessary to thaw frozen berries) 2 cups raw old fashioned oatmeal My Optional ingredients - 1/2 teaspoon fresh grated nutmeg, 1/4 cup nuts of your choice Mix together all the above ingredients folding blueberries in last. Place in greased bread pan or 8” x 8” pan. Bake in 350 degree oven for 55 minutes if using 8”x 8” pan. Adjust baking time if using a narrower baking pan or if you are at a higher elevation ( I am at sea level). I hope you give this a try. Let me know what you think. Store in refrigerator or freeze portions to take in Bertha for a quick breakfast after thaw in microwave. Buon appetito.
Oh my gosh, this is so thoughtful of you. Thank you so very much for the recipe. I'm actually trying to eat a more clean diet myself which is why I am finding ways to have my favorite snacks without all the chemicals or sugar/processed ingredients. I'm definitely going to make this recipe, it sounds so good! Thank you so very much!
When we're at our cabin & off the grid, I don't have access to a mixer. I melt my brown sugar & butter in a saucepan on the stove. I blend them til combined like a caramel. Let it cool & combine with eggs, banana & dry ingredients. It works great! I WILL try this monkfruit golden in my banana bread.... but I'll probably melt them like I do the brown sugar.... I hope your experiment turns out...
Only half way through the video but I Just thought I mention… that Raw Cane sugar is naturally golden & it’s different than brown sugar… so that’s what the lakanto brand is trying to mimic… it’s not trying to mimic brown sugar is mimicking “cane sugar in the raw” which is thick grains and dryer like you see the lakanto acting… so it’s pretty accurate in its mimic so far!

Cranberry sauce ?
Maybe if you sprinkle some of that golden monkfruit on the top befire baking, you'd get that crunchy top?
