If the stone is still inside the kettle grill while closing all the air valves, will the stone cool down smoothly without issues, even in the cold winter?

Just use more flour so it can slide, I like using durum flour gives it a nice rustic crust. Also you might just have waited too long, it should be put on the stone immediately after rolling out the dough, putting it on a flour dusted tray and adding the toppings, the toppings should be prepared beforehand to cut down the time.
Here is the recipe! Pizza Dough Recipe 2 Cups Flour 3/4 Tsp Salt 1 Tbsp Sugar 1 Packet Instant yeast 2 Tbsp Italian Seasoning 2 Tbsp Extra Virgin Olive Oil 1 Cup Very Warm Water Mix all ingredients in bowl Add flour as needed to make dough stretchy and smooth knead 3-6 minutes let rise in a warm room Bake when ready
The pizza looks a bit too pale, a shame the pizza bottom wasn't shown, I think it needed a bit longer in the grill, but the bottom might have been done, though the top certainly wasn't. I expect the lid simply don't reflect enough heat to make a proper pizza, perhaps having the stone raised, or lining the inner part of the lid with tinfoil would fix that so it cooked more evenly. You can also add a little bit of honey or sugar to the dough, to give it more color.
There's a few things that could be improved here. Heat should have been closer to 500-600 which requires a fair amount of charcoal. You're right about raising the pizza so it's closer to the lid. Using some fire bricks to raise it near the top of the lid mights have helped get the brown slightly blackened edges which are always my favourite part of a crust. Also I think he added that extra oil around the edges a bit late in the process.
Dude. First, Throw away the pizza stone ! Next make your own sauce. Then make your dough and oil and put it right on your grill then flip. Each side for two mins. Then remove and build pizza. Get grill to highest possible heat and put pizza right on grill and cover. 5 mins later you will have an amazing pizza!

There's no such a thing as an Italian pizza. Pizza is from Naples and traditionally the ingredients are kept to a minimum, because we appreciate simplicity. Also, it's definitely not cooked in a bbq.

But cook the crust first to crisp it up then pull off and add toppings and return to grill! I also did a video where I cooked a pizza on a salt block.. didn’t do much lol

If you want some nice italian style pizza, all you need is some mozzarella cheese, basil and oregano. Bam, done. Ham is a form of bastardization that is particularly favored by children over here, so by all ends and means do add it. More important is how you let the dough rise (protip: heat an oven to around 20°C, leave the door half open and cover the dough with a canvas) AND the type of yeast: chemical is fine, fresh yeast is better, sourdough is best assuming you can get your hand on some - the older, the better, mine started to be suitable after a year and half of cultivation.
