  • This Cheesecake recipe is easy and delicious to make without fail
    Ingredients:
    Crust
    200g cookies (like graham crackers or digestive biscuits), crushed
    50g butter, melted
    Filling
    400g cream cheese, softened
    200g heavy cream
    3 sheets gelatin (softened in cold water for 5-10 minutes)
    250g powdered sugar
    Juice of 1 lime
    1/2 tsp green food coloring
    Topping
    150g white chocolate, chopped
    50ml heavy cream, warmed
    1 sheet gelatin (softened in cold water for 5-10 minutes)
    1 tsp green food coloring
    Step 1: Make the Crust
    Crush the cookies into fine crumbs.
    In a mixing bowl, combine the crumbs with melted butter until evenly coated.
    Press the mixture into the bottom of mini cheesecake molds to form the crust. Place in the fridge to set while you prepare the filling.
    Step 2: Prepare the Filling
    In a large bowl, beat the cream cheese and powdered sugar together until smooth and creamy.
    In another bowl, whip the heavy cream until it holds soft peaks.
    Heat the softened gelatin sheets just until dissolved, then stir it into the cream cheese mixture along with the lime juice.
    Gently fold the whipped cream into the cream cheese mixture, then add the green food coloring and mix until evenly colored.
    Pour the filling over the crust in each mold. Refrigerate for 2-3 hours, or until the filling is firm.
    Step 3: Make the White Chocolate Ganache Topping
    Melt the white chocolate with the warm heavy cream until smooth.
    Dissolve the gelatin and stir it into the chocolate mixture along with the green food coloring.
    Pour a small layer of the green ganache on top of each cheesecake. Return to the fridge for an additional 30 minutes to set.
