Italian Making Lasagna at Home and Outside it's Raining 🌧

  • Today I'm making a traditional Italian lasagna at home. It's hurricane season in Florida and as expected we're having lots of rain. I find cooking something delicious is so soothing during these months, especially when making something that's so comforting. Lasagna is the favorite of many, a staple in every Italian Sunday lunch. A classic dish all around the world. Let's make it together.

    For the Ragu' Sauce:
    250 gr Boneless Pork Ribs
    400 gr Beef Chuck
    2 Celery Stalks
    2 Carrots
    1 Onion, medium
    2 tbsp Olive Oil
    20 gr Butter
    150 ml Red Wine
    800 gr Tomato Puree
    Salt and Pepper
    For the Fresh Egg Pasta Sheets:
    400 gr 00 Flour
    250 gr Egg Yolks
    For the Beschamel Sauce:
    50 gr Butter
    50 gr Flour
    500 ml Milk
    1 tsp Salt
    1 tsp Pepper
    1/2 tsp Nutmeg
    25 gr Parmigiano (optional)
    Extras:
    250 gr freshly grated full fat Mozzarella
    100 gr Parmigiano Reggiano
    To layer it:
    1 layer pasta sheet, 1 layer ragu', 1 layer beschamel sauce, 1 layer Mozzarella, 1 layer Parmigiano. Repeat for 7 layers of each to get the perfect Lasagna.

    You should look into the Neapolitan style of lasagna aka lasagna carnivale. It’s a whole different world of lasagna and is perhaps the most authentic style of lasagna. It has no ragu made from ground meat and usually no bechamel but instead is layered with meatballs, sausages and/or charcuterie, ricotta and other cheeses, and sometimes hard boiled eggs. Im sure yours is very delicious for a Northern style though.

      Hey Ed! Thanks for the suggestion, I'll have a look but I'm not a big fan of ricotta in my lasagna! In terms of authenticity, i can tell you that the most authentic/classic lasagna in Italy is the Lasagna Bolognese (tell em someone put ricotta in the lasagna and they will hunt everyone down - hahaha), i know they do in Naples, but i haven't try it yet!     This is great! I have a vegetarian partner. If I chose to use Impossible meat (listen, I'd prefer pork, but...), would it be best to add it at the end?

      Hey Scott, thanks for watching! I have never made a Lasagna with a meat substitute so I can't really say I'm afraid, but i think it's not suitable for long cooking time. Probably your guess is right. Let me know if you try it out (my wife is vegetarian too and would love to try it) 😊
