    I like to mix things up for my Tacos. Originally Birria Tacos are made with Beef, but in this case, I use Pork shoulder to make an awesome and zesty Pulled Pork Birria. After being braised for 3 long hours, these fragrant chunks of pork are gently fried to make the perfect Carnitas, and then they are used to stuff a simple Masa tortilla with Oaxaca Cheese in a hot pan to reach the perfect balance of crisp and juicy. With these tacos, I discovered a whole new flavor.

    Traditionally Birria is made with beef, but why not mixing few things and discover new flavors? The citrus from the orange took these tacos to another level.

    I went out of town to a more authentic Mexican restaurant on Saturday just for this. Their version had beef, but it wasn't noticeable if it included orange, clove and other spices you used, but it produced a good consommé. Have a look at Caramelo Sonoran-style fresh tortillas. They make theirs with avocado oil, pork fat and duck fat. One day I'll make something like this, but I'll probably search out other more-authentic Mexican restaurants beforehand. Thanks for inspiring others with your videos!

    Looks delectable as always. Carnitas are my favorite!
    I do mine in oven ( technique by Christine Cushing) Use my own seasoning. Also, for get togethers it's fun to do it in a cazo.
    I like the idea of using it for birria. Yum!

    I had to add less water to my dough and added lard too. I tried it like you did and my tortillas would tear when removing the plastic. After adding a little lard, they held together nicely.
    After I took the pork out of the consomme, I put everything into the blender and blended until smooth, even the two cloves! OMG, it was the perfect consistency for dipping and all of the flavors were married into one great taste.
    Dude, your recipes are golden. My wife called me a "Foodie" today after eating these! Keep up the great channel, and how about showing us a great fish dish?

      Hey Michael, yes sometimes masa flour needs less water, that’s why its best to add the water slowly until it reaches the play-doh consistency . I don’t use lard because my wife is vegetarian so I’d rather keep it out.
      About the fish recipe, SURE let’s do it.

    Incredible video, as usual. I was invited to some peoples house from Church last week, so I finally was able to have Birria. Thought for sure I was just going to have to make it myself. They are from the Baja Peninsula and they blended the corn masa and flour to make the tortillas. I’ve never had it like that before, not sure if it’s from their family or their area but it was great.

      Thanks for watch Anthony. You can definitely mix the masa and wheat flour, it’s just a different texture and flavor but they’re both truly authentic to Mexican cuisine!

      @@michaelspunich7273 Cash isn't the problem. Not spending $700 on this and accessories when I can make one under $50. Plus, I have a $2000 Weber Kamado makes pizza just fine. Most people have Grills and Charcoal grills that can do this. I didn't build my own Kamado because it would of been way to big and heavy, the Weber is light weight and suffers no cracking issues like a ceramic Kamado does. at least a small Pizza Oven isn't that bad weight and size.
      Also how often do you make pizza? For us is not that often. So not worth for me spending that amount of money for little too no use.
      Again most of us have gas grills and charcoal grills. It's redundant and just takes more space and money. For what it does it's over priced.
      That's why I said this is more of a Hipster product then a real ceramic pizza oven which can be made for super cheap.
      My Weber Kamado with my Ceramic pizza plate, with blow this oven out of the waters.
      It's a great product for portability and people who have apts, for a home owner, I'll suggest to get the real thing. Or a Weber or Ceramic Kamado.
