I came to your channel after hearing David Lammy MP being interviewed on Test Match Special today. He'd brought in a black cake as a gift. Growing up I thought of the West Indies as a single place but as I got older I learned more about the Caribbean and realised that the islands as well as Guyana have some similarities but many differences too.
This is the most Beautiful cake. Packed with flavor. It's moist yet dense. Serve small slices .It truly sings holiday...but delicious for any occasion. 😋😋👍👍👍

I made this today and it turned out just how my grandma used to make! I did have to make a few changes though because I couldn't get some of the ingredients. Instead of currants I used dried apricots and instead of candied cherries I used marichino Cherries. I also used blackberry wine instead of rum. It turned out delicious. Also I split the batter between 3 9 inch pans that were about an inch and a half thick. They took about an hour and 45 minutes to cook.
I make more of a lighter fruitcake, and always wondered how to get that dark rich colour and flavours. I never thought of blending the fruit, it makes total sense. Thanks for sharing, I will be trying this.

Is pulsing the fruit at the beginning a necessary step? Or could you leave them whole? Or is the pulsing what makes this a black cake vs. a "fruit" cake?

Guyanese Black Cake For the Fruits you will need: 1 lb currants 1 lb prunes 1 lb raisins Report this ad
1/4 lb candied cherries 1/4 lb mix citrus peel 1/4 lb almond or peanuts (optional) rum or port wine Wash and grind all ingredients. This can done with a food mill or food processor. Mix in about 2 cups of rum or port wine and allow to sit for at least 2 weeks. Store in an airtight container. 1 lb or 3 1/2 cups all purpose flour 1 lb or 4 sticks unsalted butter 2 cups brown sugar 1/2 tsp salt 10 eggs *caramel or cake coloring(about 1/4 cup) 3 tsp baking powder 1 tsp cinnamon 1 tsp nutmeg 1 tsp mace 1 tsp ground cloves 1/2 tsp vanilla essence 1/2 tsp almond essence 1/4 cup rum 1 bottle of Dark Rum

Expresso98 you're welcome and Happy New Year to you also. It is best if you soak the fruits overnight but if you have a high powered food processor or blender you can certainly do it dry.

No where near the same. Our British cake has fruit bits not blended. O look forward to trying this since I loathe fruit bits.
