    I'm cooking crab for dinner and I was hoping there was an easier way to eat it but it looks like I've been eating it just the same as everyone else after all.

    armatures, why didn't you pull the leg at each joint so that you can remove the cartilage that hold the meat together in the leg out and that way you can get the whole section of the leg intact?
    Doing more work then needed...

    3.99 a lbs??? my gawd i am in Canada and just ordered 2 live dungeness crabs direct from a fisherman.. competitive prices at $ 35 per crab

    The information in this video should not be followed for live crab.
    According to research, crab can stay alive in boiling water / steam for quite a few minutes making it a horrible and inhumane way to die.
    The most humane way to kill crab is to destroy the two brain/nerve centres as quickly as possible. The easiest way to do this is to first flip the crab onto its back. Then, line up a large knife along the middle of the underside of the crab. The brain/nerve centres are located between the eyes and where the "apron" meets on the male crab. That is the little part that flips open on the bottm that looks like a lighthouse.
    Using your hand or a rubber mallet, quickly and in one fluid motion force the knife down to cut the crab in two. I like to take the two halves of the crab and using the tip of the knife, further destroy the two brain/nerve centres to be sure.
    If you're trying to save the top of the shell for presentation or if you don't plan on cleaning the crab before steaming/boiling, you can use your knife or a sharp object like an awl to quickly stab the two brain/nerve sections. Make sure you get the tip in there and destroy them both as quickly as possible.
    Other inhumane ways of killing crab that are popular is to rip off the top shell as shown in the video, but before cooking. Research has shown that the crab will remain alive for quite a while like this as the brain/nerves are not destroyed. It is the equivalent of getting your head ripped off and staying alive without your body for an extended time.
    You see many fishermen doing this at the docks, but in many places this is illegal. The top shell in most places must be kept with the crab until it is home or about to be cooked. This is so a fisheries officer can check the legal size. Please don't use this method as it is really inhumane.
    The other is putting it in the freezer. Crab are cold blooded and will slow down in cold temps. However, research has shown that extreme temps like this invoke stress responses in the crab and it could be as uncomfortable for them as it would be for any other creature.
    Please kill your crab in a humane way and ask that your grocer/fish monger does the same. These are delicious animals and a great treat, but I think they taste better with a clear conscience.

      One final note. Be cautious when eating anything from the top of the shell. Crab filter toxins and impurities through the viscera / hepatopancreas which is the "mustard."
      This organ can have a buildup of domoic acid and can lead to poisoning. It is recommended that crab be cleaned before steaming/boiling as to not leech the poison into the water/meat. The poison does not break down during cooking, so it can contaminate the crab.

    I'll tell you I don't eat the entrance of any crab I don't care what you call it juices or what you want to call it but I'm not eating it can I eat many a Dungeness crab 🤠😎🤠
