As soon as they showed the type of tofu I was like, ohhhh no! Mary was VERY specific it needs to be medium/traditional! So glad y'all gave it another go!

PSA: We couldn't find the exact tofu that Mary recommended (medium-firm or traditional) but the second brand that we tried, Sunrise, worked better for the texture. Also: don't use actual Rice Krispies! They're not vegan. We used a brand of puffed rice cereal called Erewhon.

I agree with Theo. I HATE cooking/dealing with meat. It was one of the reasons it was so easy for me to give up buying it.

You could wrap each piece in rice paper before dipping in flour. It stimulates the skin.

I’m so excited to see you make Mary’s recipe. I love her channel! I cannot believe how much a difference it made with different brands of tofu because I’d assume all firm tofu would be almost the same. A local vegan friendly fried chicken place just opened in Dallas, and they use huge pieces of oyster mushroom double battered fried, and it tastes just like dark meat fried chicken from KFC. You guys are the cutest couple. And I love that Theo is now a regular guest on the show.

I LOVE Mary's Test Kitchen and find that her recipes are pretty much bullet proof and I had the exact same experience as your first attempt... it's just difficult to find the right tofu. It came out good, but didn't have those "layers" so I'm going to have to do exactly what you did--go to an Asian market to get a different brand. I'll try it again for sure!
Try super firm tofu. It is indeed "super" firm. Make sure you freeze it first though. It's very firm and chewy like real meat.
When you heat fats or oils to high temperatures, as with deep-frying, they can become oxidized, creating free radicals.
Oxidative stress occurs when an oxygen molecule splits into single atoms with unpaired electrons, which are called free radicals. ... Electrons like to be in pairs, so these atoms, called free radicals, scavenge the body to seek out other electrons so they can become a pair. This causes damage to cells, proteins and DNA.
Choose an oil with a high smoke point, like grapeseed or Safflower (I am a clinical chemistry scientist)
Rice bran oil has high smoke point apparently
There is a vegan Chinese restaurant near me that uses a similar method and makes orange chicken. I asked them twice to make sure it wasn't real since it tasted so authentic!

We watch ALL of Mary's Test Kitchen videos and have made so many of them. Her vegan chicken recipe if the BEST!! Our family loves to slice and press extra firm tofu and then marinate in a teriyaki sauce, then bread and fry.

I'm pretty sure one block of fried tofu per person is the perfect amount for maximum happiness ;-)
That's the only thing I didn't like about it: I ate an entire block of tofu in about 40 mins (with your K-sauce)

I used the wrong tofu at first as well. Firm was good. Actually enjoyed it. Yet to try my frozen medium. Fellow Australians Medium Tofu is available at our local Woolworths!👍😀

I wonder if an air fryer could be used??? I think you guys need to try that out and report back. :-). I really enjoy your channel and especially Theo...he makes me laugh! I just started the vegan way of eating about a month or so ago...really, really enjoying it!
I can tell you now that you can't. You can only fry things in an air fryer that you can coat in oil or doesn't need oil. It's just flour and it will be dry and chalky without any oil so you need some oil but you can't toss it in oil because it's flour coated. So deep frying is your best bet, you can do it in the oven and spray with oil but anything coated with flower will be best in a deep frying.

Do you think using extra firm would move it up on the tofu to chicken firmness scale? I'm a big fan of the extra firm tofu and I have used the freeze then thaw texture change since I discovered it. I just feel like it makes for easier pressing. PS: I love the clean up montage after your videos!
I wonder if you could leave a bit of moisture in the tofu, and mash it with some gluten flour to get that extra bit of firmness.

I make tofu fried chicken about once a week. i know how to make "faux fish nuggets" too. I use a combination of Mary's technique, hot for food's technique, my own intuition and what I have on hand. Meat eaters cannot tell the diff!
