Turkish Kazandibi - Caramelized Rolled Pudding

  • Kazandibi is Turkish pudding dessert with caramelized layer. It is traditional and common to serve in Turkish restaurants. In old recipe it has chicken breast in it that has to be very fresh in order to give it's unique texture to the pudding. This is a common version that you can make at home and enjoy. After it is caramelized in the pan or tray and cooled you serve it by rolling it or just upside down.
    Ingredients for Kazandibi - Caramelized Pudding
    2 full tbsp all purpose flour
    1 heaped tbsp corn on wheat starch
    1 cup or less sugar
    1 litre + 1/2 cup whole milk
    1/2 tsp ground mastic gum (optional) - caramel bottom also will give flavor.
    For the bottom of the pan:
    About less than 1 tbsp butter
    2 tbsp sugar or powdered sugar
    1/2 tsp ground cinnamon

    i’ve had this during my trip to turkey and i still dream about the taste! that was the only one time i’ve had this dish... hope i can recreate the taste and memories from this recipe!

    This is unbelievable. Just yesterday I went to a Turkish restaurant here in New York City, and I tried this dessert for the first time. It tasted like a piece of heaven was melting in my mouth. It is one of the most delicious desserts I have ever tasted. I wanted so much to learn how to make it. And to my surprise today on UA-cam you are making it for us. I’m glad you mentioned that ideally it should not be as thick. The one I had yesterday was more creamy and smooth. Thank you so much for your wonderful cooking. God Bless

      That is nice really :) To make it even more creamier you may add about half cup heavy cream instead of milk. It would make it more delicious. Hope you try and like it. Please let me know :) May i ask what else is most popular in Turkish restaurants in NY as main dishes, salads and desserts

    Thank you for the recipe I followed the exact same steps but I suggest for people that live in the USA to add an extra tbsp of corn starch as it took forever to get thick and I'm still making it it looks delicious

    I know Mahalebe it's a traditional dessert on my home country ,we use only corn starch to make it But I never see like your method cramalizing the bottom and cook it again on the pane that must add so much flavour to the pudding ..gonna try your method soon inshaAllah and thanks alot for sharing and your recipes ❤

      @Great Hun so 🤔 wth if recipes from diffrent countries have some similarity..both Mahalebe is some kind of flour, sugar and milk. I saw it once with cramalized top.
      Is it bad or something to find common roots to diffrent recipes from diffrent countries ?

    ❤️ ❤️ ❤️ Thank you for this simple and easy recipe. I have tried many times to make Kazan Tibi using other recipes and only made a mess. This one turned out perfect. Even my husband was happy with my effort. 😊 I wish I could show you a photo. I had to add 2 more Tbsp of corn flour as it wasn't thickening properly. Maybe our cornflour is different.     God, it looks so-o delicious... I wonder if you've ever tried to replace the table sugar that is so bad for the health with a more natural sweetener, say, - Coconut Palm sugar or such? Just a thought.

      Yeah you're absolutely right you know 🤔. Turkish restaurants in London don't offer things like the delicious simbali or revani at all for some reason yet I've been to some Turkish restaurants in NYC that do 😳🤔
