If you watch a bunch of his other prime rib cooks it seems he's at 275 degrees cooking temp as his sweet spot. It shouldn't really matter that much from 225-275 degrees F as long as you're watching the pull temp. Pull it when you're supposed to & rest it right & it'll be fantastic.

I made those walmart ones the last 2 years and they are great! I'm glad to hear the Malcolm approach. Based on all I read, I let it sit out of the cryo wrap overnight in the fridge to dry off more. It is supposed to make the crust better.

I ran across a bone in one at my local Walmart a couple of years ago. I mixed up an herb paste with fresh herbs and wrapped it up for 24hrs then cooked it on my Recteq grill. Darn thing was D-licious, I even used Mark Williams recipe for the horseradish topping. Keep those great videos Malcom and Merry Christmas to you and the family.

225 is probably good, I’d just go anywhere from 200 to 250 and take it off when it’s at temp, I doubt you would have issues with overcooking or the crust drying out
I did a 6.25 pound choice roast from Costco for thanksgiving. Dried it wit seasonings for 2 days in the refer and then wrapped it. Cooked two days later after trussing and adding Herbs de provance. My only issue was PK smoker was too hot >300 and the outside cooked faster than the inside. Still after 4 hrs, pulled it, wrapped and served about 2 hors later still at 120 inside. Perfect texture and flavor and served with some horseradish sauce, Awesome. The big take away was get you meat up to 60-70 degrees keep your PK down to 200-225 so the outside doesn't gook faster than the inside comes up to temp. Dot is awesome thermometer!!! I've done duck breast and tenderloin and a single ribeye steak in the PK Franklin. WOW such flavor!! Thank you!!!
OK we just did this I smoked it with Hickory and mesquite I also poked a few holes in it and jammed garlic and butter into it. The rest of the recipee the same came out oh so good super smokey very bold and garlicy.
Great video. Actually brought a similar prime rib roast from Walmart two days ago and planning to cook it the same way. The only thing I am doing differently is actually putting these big rock salt on it last night to dry up the moisture. Still a great recipe.

Exactly! Thanks for commenting. I walked into a super market and asked for prime rib and the butcher said all he had was choice. Even a supermarket butcher may not be educated on cut locations and their names.
Just the right size for the two of us. Always skipped over WM for meats but will have to give one of these mini-prime ribs a try on the smoker. But no prime rib is complete without some sho' nuff' grated horseradish.
Good job sir. I didn’t think it would be safe resting the meat for a couple hours being it only reached 130 degrees tops. Keeping it in the danger zone of 40 degrees- 140 degrees.

Last year, he did a SRF Prime roast - which was sponsored. Also, this is just a boneless standing rib roast. Prime Rib refers to the grade of meat, which Walmart does not sell "Prime".

Malcolm it looked delicious. Most people cook it rare, which I don't like at all. You actually cooked it and it looked unbelievable.

Yep after St. Paddy's I pick up those corned beef flats and make pastrami. Look through Malcom's recipes he shows ya how to do it.

What temp did you set the grill at???
In a previous video he cooked the prime rib at 275-300. I also went back in this video and realized he didn’t say.
Set grill at 250 until meat hits 120 and let it rest. Temp should rise to 130.
He says 250° on the email version recipe.
How long does it take to cook this this way, about?

most people mistake prime rib as prime grade meat, it's named that because it's cut from the primal rib region of the beef
