In this video I'm sharing easy vegan Mexican recipe to make for dinner this week! I love making vegan recipes for beginners, and these dinner ideas are some of my new favorites! If you're looking for easy Mexican recipes are delicious, flavorful, and a unique enough to impress your friends at your next party or gathering this summer this video is for you. Fig, Feta, and Walnut Pizza with Salsa Verde
You Will Need
1 store bought pizza dough
1 tbsp olive oil
3/4 cup salsa verde
8-10 figs, sliced
1/2 fresh jalapeño, sliced
3/4 cup crumbled feta
1/2 cup chopped walnuts
Spread the dough onto a cookie sheet and brush with olive oil. Bake at 400 until golden brown but not all the way done. Then remove from the oven and, working quickly, add 1/2 cup of the salsa, along with the figs, jalapeños, feta, and walnuts.
Then return to the oven and bake for 5-10 more minutes. Drizzle with the remaining salsa verde and an extra sprinkle of cheese if desired. Serve and enjoy!

Your Green Quinoa Chili is by far one of the best recipes ever! (And I don't just mean VEGAN recipes. I would have eaten this even before going vegan.) I just top it with vegan sour cream and tortilla strips and I could eat it everyday. I actually just finished up the rest of the leftovers yesterday from a batch I made earlier this week 😊

I wonder if the frozen berries are why the waffles didn't turn out perfectly? Maybe try without berries next time. You can also try adding grated apple to the batter instead of sugar if you're trying to make them healthier.

Right! I was so excited! They were at Whole Foods! You can also use dried figs or dates or apricots or fresh peaches when they're in season. All would be so good!
