I just came back from Mongolia two weeks ago, and I can't stop watching Mongolia documentary until today. gonna visit Mongolia again for sure. Mongolia is so unique and wonderful. Love from Malaysia.
In Trabzon / Turkey we have a dish called Kuymag. Its corn flour, a lot butter and atleast 3 different cheeses. When the butter is at the top, its done just like your Khailmag. As we come from Altai, there is a connection there.
I just discovered this channel a couple of weeks ago. I've always wanted to find out more about Mongolian cuisine and culture. This channel is excellent!
As an Indian I had no idea ghee is so integral to another culture as well that too a place so far away. Very nice. Yes, Ghee is by far the best form of fat to consume. It's mixture short and medium chain fatty acids unlike unhealthy modern refined oils. Good luck to you and your country.
So our ancestors were originally mongolian nomads who settled in the region where we are currently residing in and the similarity of the dishes that have survived for hundreds of years still surprises me even today. That hard dairy thing, we call that "churpi" I would love to go to mongolia!!!
Ghee is most extensively used in india. However the method of production is quite different here. 1st butter is churned out the "desi" way from full cream yoghurt or curd and then the butter is clarified by slow heating until all water is lost, leaving an aromatic, delicious desi ghee. Try it sometime. BTW awesome dessert. I'll try it, and Nargie, you've got some serious style man! 👍
The ghee here is the result of making khailmag. The ghee production itself is different. They don’t produce ghee by making khailmag is what I wanted to say
Thanks for sharing all these beautiful videos for us, I am Mongol as well but my ancestors left Mongolia long time before nearly 800 years and still we have similar tradition. some words I still know when guys talking. anyway I am living in Aus now and want one day to see Mongolia. Thanks Hanif (Hazara)
He is too adorable. His enthusiasm is intoxicating and even though he looks pretty rough and warrior like, he always smiles and seems to be a very cool guy. Always so positive and charismatic! 😍
I can feel the emotions while you eat this. Food from our Childhood is the best! This got me Nostalgic for my own childhood and the foods I ate back then, McDonald's Pancakes with Sausage! We only got to eat it about 2 times a month, but it was one of the things I use to look forward to the most back then. These days, I rarely eat McDonald's, but when I do, it always takes me back to my childhood.
We call khalimag mava or mawa in India it's literally the same thing and we also have ghee it's clarified butter I guess the silk road really did work 🇮🇳♥️🇲🇳
Umm, tbh, it is not actually a very best time to visit Mongolia because of the coronavirus in China. We share borders with China and it is possible that many Chinese infected people had entered to our country or some merchants might’ve brought the virus. They closed down the schools, events and lunar new year, so, yeah. But I’d definitely encourage you to visit Mongolia in summer, i hope this virus will be gone before summer.
In Turkey we make it with butter and corn flour. But we eat it salty and call it Kuymak. And in western Turkey we make the sweety one with fresh cheese. We directly call this milk cream kaymak
Just love your program, mongolia is on my bucket list to visit. But I'm I'll an mostly will only get there in my minds eye. Love you, Nargie!!! As a dear friend!!!
GHee is also widely used in India, Pakistan and other Asian as well as Middle Eastern countries. I personally love ghee. True when you say that is has lots of health benefits. But what I learnt today from your video is that, Mongolians surely have excellent resource management skills. Making the fullest use of the abundant dairy produce without wastage (although a necessity because of the harsh weather conditions there), is extremely commendable.
Ghee as a medicinal treat. I love it. Also I realized they don't need refrigerators in that area. They just have to put it outside to chill the food 🥶🥶🥶
In India, Ghee is a household item. And we call it 'Ghee' too. It's good in the cold winters. We would call Khalimag , Halwa in our country. We make it out of Flour, wheat flour and suji. Thanks for the lovely video.

Ghee is a term from India, westerners are more familiar with the term clarified butter which is relatively inexpensive to make but most people are to lazy to fry the solids out of a block of butter so they spend two or three times more money to buy butter they could have made at home in less than 30 minutes.
Wow great video - really interesting to see this Mongolian recipe, especially since it has ghee. Who doesn''t like ghee. In Gujarat, India we have a similar dish called Sheera which can be made using different flours, ghee, sugar or jaggery and also some spices.
Mr. Artger thank you so much for your channel! It’s great to have a glmpse of mongolian treasures! Is there any way where we can purchase mongolian goods in the internet?
We Indian accumulate milk cream for a week & make ghee.. First we churn the whole cream with some water to seprate butter from mattha ( white liquid leftover during cream churning.. We drink mattha in summer season ) . The butter is then heated to form Ghee..during the process the leftover brown yellow product is also delicious edible ( add tiny amount of salt & eat it with chapati)...
dear mr nargie I enjoy watching your videos ❤️❤️ they are very interesting makes me want to visit Mongolia keep up the good work makes also want to learn the language love always 😇❤️
Hi Nargie, off topic, but you said once you are a metal head. What bands do you like? I recently became aware of the Mongolian band "The Hu" and I love them.. Also, one of the guys in their video "wolf totem" looks quite like you.. Love your videos and your passion for food. Cheers!
I'm American and I use a lot of ghee for frying things (it doesn't burn since the milk solids are out of it) but I make mine, a college friend of mine from India taught me how to make it. The commercial stuff has an ''off-taste''.
WeIsDaTyrantz believe me, the khailmag as it is so much better. I don’t really think nutmeg and cinnamon will go along with it , but , i mean everyone’s taste is different.

The ghee for Mongols is like olive oil to Italians . Cant imagine the cuisine without it
I'm Italian and I make and use ghee 😂
True for India also.
@@zenith355 India discovered ghee before anybody else did . It is mentioned in the Shastras and in books of Ayurveda too .
Thanks for taking me back in time to my childhood in Pamirs in central Asia...we have a none sugar version of this...

Not true. We also use cream/ Malai to extract ghee.
Same here in India we also value ghee very much...greatings from India👍

Wow Khailmah is almost similar to making Halwa in India and I didn't know that in Mongolia also cow butter is called Ghee. Love from India
IIRC Nargie calls it ghee to make it easier for non-Mongolian viewers to understand, the Mongolian name for it is "shar tosh"
My boy Nargie, blessed son under the great blue sky
I need Nargie and The Hu to have a Mongolian feast episode, pretty please 😁
"honey what are you doing?"
"i'm greasing up our kid's body with ghee"

awesome, man! Just by watching you guys cooking it, my mouth is full of saliva
