  • A Malaysian style mix vegetables curry make with 10 types of vegetables such as potatoes, carrot, young corn, aubergine, long bean, cabbage, cauliflower, brocoli, okra, and tomato.
    RECEPI
    Mix Vegetable Curry Recepi
    Ingredients
    Potato 1 medium - Cut cube
    Carrot 1 medium - Cut cube
    Young corn 20g - Cut half
    Cabbage 50g - Rough cut
    Cauliflower 50g - Floret
    Brocoli 50g - Floret
    Tomato 2 nos - Wedges
    Aubergine 30g - Deep-fried
    Longbean 20g - Deep-fried
    Okra 15g - Deep-fried
    Onion 1 nos - Slice
    Garlic 5 cloves - Chopped
    Ginger 2 inch - Chopped
    Curry leaves 1 stalk
    Star anise 2pcs
    Cinnamon stick 1 pcs
    Coconut milk 500ml
    Tomato ketchup 2tbsp
    Cooking oil 200ml
    Salt as needed
    Method
    1. Deep fried Aubergine, Okra and Longbean and keep aside.
    2. Saute cinnamon stick, star anise, garlic, ginger and slice onion.
    3. Add in carrot potato and curry powder.
    5. Add some water and add in carrot and a pinch of salt and let it simmer
    6. Add in coconut milk 250ml and tomato ketchup and let it continue simmer
    7. When the gravy reducing add in the rest of the vegetables except the fried one and tomatoes.
    8. Add in some water and remaining 250ml coconut milk and let it continue cooking
    9. Once all the vege and potatoes are cooked add in the deep fried vegetables and adjust the seasoning.
    Ready to serve.
