Our services have a much more traditional style of music. More dissolves than cuts. But I do on some songs that feature a soloist, is keep one camera tight, then another as a 2 or 3 shot, then switch the framing on the chorus. Then use PTZ's on instruments. we have the problem with a large room, full frame sensors and a limited budget for high end lens. Using a 50-600mm on two cameras, one can get tight, the other not so much.

We use an ATEM Constellation for our switching, which then feeds into an ATEM Mini Pro for the actual streaming

How do you all keep the camera men out of the frame so well?

Deliberate positioning of our cams in the room so that they don't point directly at our ops too often, and then knowing where on the stage is "safe" given who's leading a song etc. Sometimes I'll ask someone to move slightly if I notice them being really obvious too. But overall, it's just a lot of reps and practicing that exact thing!
