- My Mom’s Makloubeh Recipe 😈😋
Ingredients:
4 Chicken legs
3 Cups Rice
6 Cups Water or Stock
1/2 Cauliflower Head
1 Large potato
1 Large Eggplant
Oil and salt veggies to taste
Total seasonings:
1 Tbsp Salt
1 Tsp cumin
2 Tsp Turmeric
2 Tsp Cardamom
1 tsp coriander
2 Tsp All Spice
1 Cinnamon stick
1 Bay Leaf

HONESTLY the burnt rice looks so delicious! Koreans have a dish called BiBimBap where u eat a mix of rice, meats, & veggies from a sizzling hot stone bowl. Because sometimes there is sesame oil inside, it crisps up the rice and makes "rice edges" and adds a deep flavor! Bibimbap is one of my faves for this unique reason :D

I just had my first Maqluba yesterday. And I have some leftovers today. So good! It’s basically a chicken casserole with a little more style and Arabic seasonings - it’s delicious. I will make this. I am not sure how they made the chicken, so tender and delicious, but it was some of the best chicken I’ve had from a restaurant.

I miss my mom's makloubeh so was looking for a recipe. This looks great. She makes it with broccoli, cauliflower, or, my personal favorite, fava beans. The main must use spices for me are nutmeg and cinnamon. Cardamom, turmeric, and allspice are great additions.
I'd love to see you cook the same dish the traditional way.

I love the oven roasted option as opposed to all the frying. Saves me oil, burnt oil smells, and a bunch of super greasy veggies.
Plus, my family fights for the overcooked rice top so that’s a good thing for us.

It is Arabic and my friend used to make it, but I cannot find the recipe. It has yellow/red lentils, chicken, citric acid, curry, onion, and these tiny short fried vermicelli-like noodles in it. It is the best soup I have ever tasted! It is really good with a pita dipped in it.
Do you mean Moroccan harira? It is a soup that contains chickpeas, lentils, and vermicelli, and it tastes delicious and sour.

It has religious significance as our prophet صلى الله عليه وسلم taught us to say it before eating. Muslims say this. Its pronounced bismillah. Hope this helps.
