Late Night Quadruple Onion Smash Burger

I smashed a burger in my wok (to contain splatter).
It has 4x onions:
- thin sliced and smashed into the patty
- raw under the cheese (this is a good move)
- fried shallots on top
- fried shallot aioli on the buns
It also has pickles.
To make the fried shallot aioli, I make my basic garlic mayo recipe, but blend in a big handful of store-bought fried shallots at the start along with the eggs, then a big dash of fish sauce at the end. It's similar to the Fried Shallot Caesar Salad dressing recipe I wrote for the NYT recently.

Fine, relatively sober.. sober enough to strap up the camera and record and cook w/arguably the wrong pan b/c it was the only one easily at hand or b/c confidence. all things he's done 1000's of times sober. but, that was not a sober late night snack lmao.

I dunno. The mental rehearsal necessary to get the burger from the pan to the bun tells me he's proper gooned and his hands are just cooking on autopilot

Kenji would arguably be way more successful on UA-cam if he almost exclusively made these late night munchie videos, but he loves sharing cooking so much that he puts the effort into making the most informative content out there!

Dude either has the best, quietest exhaust hood in the world, or some crazy good ventilation in his kitchen. Every smoke alarm in my house would be going off right now if I did this, even with my crummy hood running
I'm wondering if the gopro/editing can remove a whitenoise sound like that vent hood. I have a 300cfm one and it can be decently loud and not quite powerful enough to get the smoke out of the house for a smoking situation like in the video.

@@moses7313 Not sure. Kenji recommended The Wok Shop in his book. I'm incredibly happy with mine. It was only like $50 and really high quality.
@@moses7313 If it is the same one he has had for a long time, I believe he stated he got it at Target years and years ago.
@@moses7313 Don't hold me to it, but it might be like some kind of Joyce Chen wok from Target he got 20+ years ago. He definitely said it was from Target, but not exact on the brand. Point being.. there's no need to get some artisanal wok to make good food.
As I've been able to work from home more in the last couple years, I've come to realize something: it's much easier to cook for myself than cooking for my whole family. It's not just adjusting for spice or flavors, but also that it takes a lot less time to make 1 burger vs. 8... I know that's simplistic, but I love cooking for my family or a crowd, but I have a lot more fun cooking for just me. Kenji's late night videos remind me of that fact.

On his Instagram feed, he regularly posts photos of the glorious things he makes from leftovers. I get the feeling that having to throw things out is not an issue.

A great thing about you Kenji is that your kitchen and fridge are all very normal and lived in. Your house in general seems comfortable and real.

You know, I never once stopped to think that a mandolin would be perfect for getting onion slices.
Be careful, you might end up with finger slices if not.
I hate cleaning it. So, I always just use a knife even though it’s a bit slower.

Wow... I love the onion smash burger (or Oklahoma onion burger, or whatever you want to call it), and I've been really trying to perfect it over the past two years or so. But I never dreamed of incorporating different types of onion. Now I'm thinking onion bun, grilled onion, steamed onion, raw onion, and fried onion. Maybe caramelized onion because why not?

Onions on Top is a great Idea for getting more different flavours and textures from the Onion. Usually I only frie them with the burger and also put some fried in the top. Must remember die addition of Onions after the flip next time…. am I drooling? Also I was thinking that my dog would have been awake and demanding her share the Moment the Beef hit the Wok, when Shabu came demanding.

Question for the fans and kenji if you're reading. How do y'all safely store the mandolin?!? Which drawer and with what else! That blade is scary!
I hang The one I use at work, and the one at home I keep in a drawer. . Just turn the screw which adjusts the thickness of the slice until the blade is below the surface, Virtually impossible to cut yourself on it when stored that way.
Did you cook the burger in the wok out of convenience, or is there another reason?
Sautéed, steamed, French-fried and fresh - so that’s the quad onion?
