What's the location of each of the restaurants you visited? Especially keen on the seafood hotpot
That hot pot place should be the best in town. They have some really amazing seafood! There are actually few (maybe 3?) different locations in Hạ Long and it’s called Hồng Hạnh.

That's awesome! You should definitely try banh cuon in Halong as well. It's quite special there as they serve it with squid sausages/patties (Chả Mực). The best place is called Bánh Cuốn Gốc Bàng.
